Creamy Wild Rice Mushroom Soup

A hearty yet healthy soup recipe that's thick, cozy, and creamy - yet calls for ZERO cream. Reheats like a dream, too!

Step 1

Saute sliced mushrooms and garlic in butter until deeply caramelized. Scoop onto a plate.

Step 2

Saute carrots, celery, & onions in more butter until tender. Season with salt, pepper and dried thyme.

Step 3

Add a wild rice-brown rice blend plus chicken stock, then simmer until the rice is tender, 45-60 minutes.

Step 4

Stream in milk whisked with flour then simmer until thickened, 10 minutes.
