It’s Friday treat day!
Growing up, Friday was my brother’s and my favorite day of the week – and not just because we got to have pizza for dinner. No, it topped the charts because it was treat day!
Every Friday night my Dad would come home from work with a special surprise that he’d hand over as soon as he located each of us from the hiding spots we’d race to as soon as we heard the garage door open. Making Dad work to find us was lots of fun (though it wasn’t hard per the giggling!) Treats ranged from Snickers bars and the always-coveted pack of Big League Chew (BLC FTW!) to new puzzles, and just-released Disney movies.
Friday treat day is without a doubt one of my fondest memories from childhood and I will definitely be doing the same for my kids once they’re old enough to appreciate grape Laffy Taffy and a good Puzz 3-D. You know you loved ’em.
At any rate, my Friday treat for all of you is Mini S’more Pies – quite possibly the best thing I’ve eaten all summer!
My Mom made these for Sunday lunch last week and when I asked if you guys wanted the recipe, the response was a resounding – GIMME! I’m so glad. These Mini S’More Pies are too fun and couldn’t be easier to make.
The result is adorable mini pies that are the perfect treat for kids, and kids at heart. The marshmallows are toasty and gooey, the graham cracker crust perfectly crunchy, and two layers of chocolate absolutely melt in your mouth. I had two in 10 minutes. Really.
Start with a pack of mini graham cracker crusts. I found these in the baking aisle – 6 to a package.
Place the crusts on a baking sheet then bake at 375 degrees for exactly 4 minutes.
While the crusts are still hot, place 4 squares Hershey’s chocolate into the bottom. The heat from the crust will cause them to melt into a solid layer.
Next, gently press 3 large marshmallows on top of the chocolate then broil ’til they’re golden brown. Tip: I placed my oven rack just above the middle of the oven so the broiler slowly toasted the marshmallows, giving them time to soften through before getting brown on top. Did that make sense? I hope so.
Finally, melt 2 Hershey bars in a microwave-safe bowl then spoon the melted chocolate on top. Give the mini pies a little jiggle to get the chocolate to smooth out on top.
Let the pies cool for 1 hour, or until the chocolate on top is set, then serve ’em on up. IF you have any leftovers, they’ll keep for up to a week in an air-tight container. How great is that?!

Mini S’more Pies
Description
Mini S'more Pies are for kids, and kids at heart. These gooey, chocolatey desserts are adorably delicious.
Ingredients
- 6 mini graham cracker pie shells
- 4, 1.55oz Hershey's Milk Chocolate Bars
- 18 large marshmallows
Directions
- Preheat oven to 375 degrees. Place mini pie shells on a cookie sheet then bake for 4 minutes. Add 4 chocolate squares into the bottom of each shell then place 3 marshmallows on top. Place oven rack just above the middle of the oven then broil until marshmallows are toasted on top.
- Melt remaining chocolate in a microwave-safe bowl in 20 second increments, stirring between increments, for 1 minute or until smooth. Spoon on top of toasted marshmallows then let mini pies cool until chocolate is set on top, about 1 hour. Store in an air-tight container for up to 1 week.

Love the idea of Friday treat day! We had something similar…”surprise” after dinner or before bed most nights…a small dessert, book, puzzle, get to stay up later, etc. It was always fun to try to guess!

That’s such a fun Friday tradition! At our house growing up, my dad would let me pick out his tie on Fridays, and I always chose this red ladybug one. No candy or treats involved, but it was still a fun father-daughter thing! And I LOVE your cute mini s’mores pies. You can never have enough chocolate or marshmallows!

Those Keebler pie shells are among my “go to” items and they are among the few things I always know I have on hand.
I’m STILL trying to create a “standing” inventory of things I should ALWAYS have on hand in my pantry…thus far it’s soups, rice, Keebler shells and pudding mix, tuna, Kraft macaroni and cheese boxes…how sad is THAT!
My husband saw this and he is no insisting I make these for him to have tomorrow! Hmmmm to make the yummy looking snack or not? I think I will listen to the husband for once! hahha!
