I’ve got the only fruit salad recipe you’ll need all summer – Mojito Fruit Salad!
It is absolutely no secret that I am – hmmm what’s a word that’s stronger than obsessed? – infatuated with mojitos. The first time I ever drank one was during a spring break trip to Mexico a million years ago, at some all inclusive resort where the rum and mint runs free. The rest, as they say, is history.
Mojitos are great year round but the combination of mint and lime is especially refreshing in the heat and especially when it’s mixed with the ripest of summer fruit and berries, like in this salad.
Fresh chopped watermelon, strawberries, raspberries, blueberries, and mint are tossed with a quick and easy, lightly-sweetened lime glaze before serving. So simple. So unbelievably luscious.
I made this fruit salad on a whim for a BBQ that Ben, Lincoln and I went to over Memorial Day weekend and it was a total hit. It’s got just a little somethin’ somethin’ over other fruit salads, on account of the mint and lime of course. I even gave some to Lincoln and he inhaled it!
Now, this salad is mojito-inspired, but there’s no rum. That being said, adding a splash or two would be a fun way to jazz up the recipe for an adults-only BBQ. Ooo oo, and even though there’s no booze in the recipe, take it from me, leftovers are fabulous when added to sparkling wine. The juicy fruit and berries create this wonderful, sweet syrup and it’s just heavenly when added to a fizzy glass. I like FlipFlop Wine’s Sparking Pinot Grigio the best for both price and flavor.
Alcohol aside, get on this salad ASAP!
Like I said, this is the easiest fruit salad to make in the world. Simply add 4 cups fresh cut watermelon to a big serving bowl along with 6oz blueberries.
Next add 6oz raspberries, and 1lb chopped strawberries.Â
Then add the mojito-iest part of the fruit salad – fresh chopped mint! I tell you what, nothing conjures up thoughts of summer quite like the smell of fresh mint. Ahhh.
Finally mix up a fresh lime glaze including 1/4 cup fresh lime juice and 3 Tablespoons powdered sugar in a small bowl then drizzle over the fruit and berries and gently toss with a spatula to combine.
Let the fruit salad sit in the refrigerator for 10-15 minutes to allow the natural juices in the fruit and berries to seep out, creating a luscious sweet syrup. Ladle into bowls then serve! I

Thanks for this excellent and unique recipe! I love making fruit salads, and just happen to have a bunch of thriving mint in my outdoor herb garden, just waiting to be used!

I used a slightly different combination of fruits, based on what was locally available. This was so good! The combination of sweet lime and mint made a refreshing treat on a hot day. Plus, the mint leaves made the dish look a bit “dressy”.
Totally know what you mean – fresh herbs tend to class up any dish with such little effort. I’m so glad you enjoyed it! :)
Excellent. Received many compliments for this dish

[…] Mojito Fruit Salad and I met last summer and haven’t looked back since. Pairing mint with watermelon is just such an unexpected way to reinvent this summer staple. The recipe calls for raspberries, strawberries, and blueberries mixed in with the watermelon. I use whatever combination of blue and other red berries I have on hand or that is on sale at the grocery store that week. The extra mint that you don’t use in the salad is perfect to throw in a gallon of sun tea. Or a real mojito. […]
