Last week I sent Ben to the grocery store with explicit directions to find two of the most perfect, unblemished, uniformly sized russet potatoes he could get his hands on, and he came back with 37 of them. Ok, ok….10. But still – that’s a ton of spuds.

Since then I’ve made mashed potatoes, fries in the Air Fryer, Seasoned Broiled Potatoes, and my latest creation, Crispy Potato Snack Stacks. If you like chips (hello #1 food on Kristin’s kryptonite list – followed closely by buttered popcorn,) these crispy snack stacks are going to become your new favorite treat. Crunchy on the outside and creamy on the inside, they’re crisped up and flavored with hummus!

In case you didn’t know, May 13th is National Hummus Day and Sabra is helping me celebrate by sponsoring this recipe. I’ve been eating Sabra for years and years (their Olive Tapenade hummus – be still my heart!) and while I love using it in everything from juicy burgers, to easy layered dips, and quick snacks, coating sliced potatoes with hummus then roasting until crispy is totally new to me, and the results are still blowing my mind. This is one of those recipes I thought and hoped and wished would work out, but had a feeling might flop. Once I pulled the sizzling stacks out of the oven though, I immediately broke out into a happy dance a la Tom Hanks in Castaway when he finally makes fire.

That is to say it totally worked.

I’m calling these babies snack stackers because they’re the kind of food that never makes it to the plate at dinnertime. Ben comes home from work absolutely ravenous, and Lincoln always requests a snack after waking up from his afternoon nap, so to have these healthy bites on hand to keep hanger at bay during “unofficial meal time” before dinner is ready, is totally clutch.

That said, if you want to serve these as a side dish for dinner versus a snack, just add a few slices on top of each stack to make them more substantial. I’ve included cooking times for both options in the recipe card below!

Start by whisking together 2-1/2 Tablespoons extra virgin olive oil and 1/4 cup Sabra hummus in a large bowl. I used their roasted red pepper because we always have it in the fridge, but any flavor would be delicious – especially the roasted garlic!

Next slice 2 medium-sized potatoes (about 10oz each) 1/8″ thick using a mandoline. I’ve had this OXO mandoline for years (maybe even a decade??) and it never lets me down. Pro tip: rotate the potato a quarter turn every 3 or 4 slices to make sure your slices all come out evenly.

Add the potato slices to the bowl with the hummus and oil then add a generous amount of seasoned salt and toss with your fingers to coat.

Next line a baking sheet with a silpat, parchment paper, or nonstick sprayed foil, then layer 8 slices of potato on top of each other to form a stack. You should get 11-12 stacks out of two potatoes. If you want to serve the crispy potato stacks as a side dish versus a snack, layer 10 potato slices on top of each other instead of 8, which will give you a more generous portion size.

Spritz the tops with nonstick spray, add another dash of seasoned salt, then bake for 25-35 minutes at 375 degrees, or until the tops are golden brown and crispy. Last step >> demolish. I hope you love these easy, tasty, Crispy Potato Snack Stacks! Enjoy!

Crispy Potato Stacks

Crispy Potato Snack Stacks are a cinch to make. This 4-ingredient, gluten-free, dairy-free snack or side dish will be a hit with the whole family!

Ingredients

makes 11-12 stacks

  • 1/4 cup Sabra hummus, any kind - I used Roasted Red Pepper
  • 2-1/2 Tablespoons extra virgin olive oil
  • 2 small russet potatoes (10oz each)
  • seasoned salt (or regular salt)

Directions

  1. Preheat oven to 375 degrees. Line a baking sheet with a silpat, parchment paper, or nonstick sprayed foil then set aside. Add hummus and extra virgin olive oil to a large bowl then whisk to combine. Slice potatoes 1/8” thick using a mandolin then add to the bowl with the hummus and oil, season with seasoned salt, and then toss with your fingers to evenly coat.
  2. Stack 8 potato slices on top of each other on prepared baking sheet then spray tops with nonstick spray and sprinkle with more seasoning salt. Bake for 25-35 minutes, rotating pan halfway through, or until tops are golden brown and crispy. Serve with extra hummus, if desired.
