Carrot Cake Pancakes

I decided on what I’ll be having as my last meal on earth today…

Back story: I came home from work early with a terrible migraine caused by these flashes and floaters I occasionally get in my eyes. The only cure to said migraine is sleep. Lots and lots of sleep.

So sleep I did, after shutting every blind in the house, cranking up the AC and crawling into bed. I awoke four hours later feeling like a new woman. No flashes, no floaters, no migraine and a clear vision in my mind of the Carrot Cake Pancakes I needed to make for dinner.

Where this craving came from, I have no idea – but one bite of the sweet, buttery, carrot-cake pillows, and I knew I had found it: my choice for last meal on earth.

I started the last meal by consulting my pantry, which is conveniently stocked with a plethora of pancake mixes.

Which one would I choose (and more importantly, WHY do I have so many?!) Multigrain, Fat-Free Buttermilk,

Pumpkin or Wheat Blend?

After a good foot tap, I chose…

Fat-Free Buttermilk. Best to highlight the spicy and sweet flavors I’d be adding to it, I figured.

I measured out the dry mix, then added in the classic carrot cake flavors: cinnamon, nutmeg, cloves and, of course, carrot.

After stirring in water, I poured the gorgeous, orange-hued batter onto a warm griddle, then flipped and cooked on the other side when bubbles popped up on top.

After stacking the fluffy cakes on top of one another,

I drizzled melted vanilla,

honey,

butter on top.

Carrot Cake Pancakes

Serves 1

Print this recipe!

Ingredients:

1/2 cup just-add-water dry pancake mix

1/4 cup finely shredded carrot

1/4 teaspoon cinnamon

pinch of nutmeg

small pinch of ground cloves

1/2 cup water (maybe less, maybe more)*

Directions:

1. Pre-heat a flat-top skillet or griddle to medium low. Combine ingredients from pancake mix to ground cloves in a bowl. Add water and stir until all ingredients are thoroughly combined. *Depending on your dry mix, you may need to add more or less water to get the batter to pancake consistency.

2. Spray the pre-heated skillet with non-stick spray and pour the batter into four, equal-sized pancakes. Flip when bubbles appear on top and continue cooking until both sides are golden brown.

3. Serve with vanilla-honey butter and real maple syrup.

I always seem to turn to comfort food when I’m feeling under the weather, and this warm, decadent, cozy meal is the epitome of the term.

    Oh.my.goodness. You never cease to impress with your recipes, and now you have done it again!! I love carrot cake, muffins, doughnuts, etc, so I know I would enjoy these!
    I am not sure about the actual meal, but dessert would be ice cream! Like a humongous amount with peanut butter drizzled on top…and crushed oreos, chocolate sprinkles and PB cups… oh and how about some chocolate chips too! :)

    Those carrot cake pancakes look phenomenal… and there is no other way to go, PURE MAPLE SYRUP! (I an ashamed I used to eat the horrendous ”sugar free” kind… tasted so fake)!

    Looks like another yummy recipe I’m going to try. I just got done making your Fluffernutter cookies. I added a tablespoon of Nutella to your recipe, to see if it would taste alittle like a smore!!! they were really good and ohhhh so easy to make!!!

    You know, a sudden onset of flashes and floaters can be a symptom of something serious like retinal detachment. Have you been to an optometrist lately to have your eye health checked??
    (although, migraines sometimes have a visual component to them like blind spots, bright flashes, and auras… this is most likely what you’re experiencing)

    **aside from the un-asked for concern, those pancakes look delicious. Think I’ll be making socca for dinner now (kinda like pancakes, right?)

    As tempting as those pancakes look, I think I would opt for a perfectly grilled filet mignon with potatoes au gratin and a spicy red wine! Glad to hear you are feeling better and thanks for sharing the recipe! Sounds like Sunday Brunch to me!

    Oh-em-jeez louise….these look SO DARN AMAZING. I would totally have these for breakfast tomorrow morning, but sadly I have school in the morning. But clearly illustrated in your post, I see that I am not the only believer of pancakes-for-dinner ;) These shall be in my belly by this time tomorrow, ferrrrrsure.
    And if I had to choose right now what my last meal on earth would be, it would definietly be….a big pot of chocolate fodue. And I would dip in strawberries, bananas, raspberries, cream puffs, cookies, pretzels, my hand….the possibilities are endless :)

    Oh wow those pancakes look AMAZING!

    My mom makes this amazing monkey/pull apart bread that I have been craving lately, so right now, that definitely sounds like it would be my last meal!

    Oh and migraines …yuck. The only thing that make mine go away are tons of sleep also. Since I’ve started doing yoga regularly though, they have gotten ALOT better.

    These look delish. Carrot is my favorite cake flavor, so I know I would love these. If you wanted to get crazy, you could make some type of cream cheese frosting/topping :)

    Yum! For what it’s worth, my favorite pancake mix is Aunt Jemima’s Whole Wheat Buttermilk. It is to die for! I pick it up at Hy-Vee whenever I’m in Des Moines. :)

    Yum! My choice would be really great pizza. Had some last night from The Brown Bottle and it was terrific. We made banana bread from the Trader Joe box mix this past weekend and it was crazy good with a bit of a cornbread taste.

    And bummer about the migraine. I’ve been a sufferer since age 6 – never had the aura with floaters, but always have the puking. gross. Don’t get many anymore…yoga has helped me so much!

    Wow, looks good! Glad you got over your migraine. Horrible things!

    LOL, I typed all this food out then realized this would be my last meal on earth because eating all this at once would kill me! So, I would ask for a buffet with homemade lemonade, sliced strawberries & kiwi, Danbauk, which is Burmese style biryani (spicy rice with chicken), with naan & raita, and then my mom’s barbequed lima beans, mock lasagna, carrot cake, and coconut brownies….with vanilla ice cream. Oh dear.

    I get floaters like that too! Do you have lattice degeneration? That’s what I have – have had multiple laser surgeries to correct the “holes” on my eyes so my retina doesn’t detach. But still get the occassional floater. Anyways, those pancakes look ridic. You’re recipes always kick a$$ but this week you are pullin out the big guns, lovin’ it!!

    I *have* to try this. Carrot cake is my absolute favorite! I always ask for carrot cake on my birthday instead of regular birthday cake. Mix that with pancakes (my other favorite food) and you have a match made in heaven!

    I agree with Laura! My last meal would consist of: Lobster, crab legs, and a delicious crab cake! Along with a salad and baked potato (butter and sour cream please) on the side! Yep, that’s what I would want! Oh, and can I have a slice of red velvet cake with cream cheese icing for dessert? ;)

    Your pancakes look ridiculous! OMG! I have to go grocery shopping tomorrow, the ingredients for this will be on my list! Awesome!

    A friend just recommended your blog and based on this recipe alone you’re now in my Google Reader. These look ridiculous! And I’m always searching for new pancake recipes. They’re my breakfast sweet of choice. Hubsters prefers waffles, so I’m always looking for a new pancake recipe as an excuse to try them (and therefore indulge in pancake goodness).     Migraines are the worst! I’m glad you’re feeling better. Sleep is truly the only remedy….maybe along with a few Advil.

    These look delicious. Once it is under 100 degrees, I might give these a whirl. Carrot cake always seems like a fall thing for me, so I might have to wait a few more weeks until it feels that way in Dallas.

    I would probably have homemade mac and cheese, caesar salad (my mom’s homemade recipe), and goat cheese pizza. I know these don’t go together at all, but they are my favorite comfort foods!
