5 Minute Lunch: Turkey, Avocado & Hummus Wrap

51

I’ve officially changed my future retirement home location from Praiano to the Lake of the Ozarks.

IMG_2302 IMG_2352 IMG_2333

That is to say – OMG WHAT A FREAKING BLAST THAT PLACE IS!

IMG_2314

Friday morning Ben and I drove 5 hours south and arrived just in time to spend the entire afternoon boating, bobbing, sipping, and in general, having one of the best days ever on the monster-sized lake in central Missouri with our friends.

IMG_2362

One of my favorite parts was checking out the homes – nay, estates – dotting the sheer cliff walls, coves, and lawns just off of the water. I am not kidding you when I tell you this 7,000+ sq ft home was one of the smaller places we saw!

IMG_2315

Ok, sipping raspberry vodka mixed with coconut rum and a splash of Rose’s Mojito mixer (aka the best drink ever) while floating in the water in pool saddles provided some stiff competition (pun intended.) ;)

IMG_2316

Ahh. Lake time is the best time. Now to start that pesky boat fund…

IMG_2332

Another thing I loved about the lake were the fun restaurants and bars lining the water where you can park your boat then head in for some fun.

We went to a few places for dinner, but kept the afternoons casual and packed yummy wraps from home for a quick & easy floating lunch. Choosing from an assortment of deli meats, fresh toppings, and spreads, I came up with this Turkey, Avocado & Hummus Wrap that was so good, I made it both days we were there out on the water.

The5MinuteLunchMain2

Lean deli turkey is layered on a whole wheat tortilla with zesty red pepper hummus, creamy avocado slices, and salty pickles for crunch, then rolled and sliced.

DSC_0730

The fact that it took all of 5 minutes to make made me swoon over this tasty, filling wrap even more. They are awesome for quick lunches any day of the week – whether on land, or lake!

DSC_0736

Start the wrap with a tortilla. These organic Whole Wheat Tortillas from Whole Foods are really good. Very pliable and fresh tasting.

DSC_0712

Next, spread on a layer of red pepper hummus. Now, I am very brand and flavor loyal to Sabra’s Red Pepper Hummus, but our local Whole Foods doesn’t carry it (I know!) so I went out on a limb and tried Chef Earl’s Red Pepper Hummus. It isn’t as smooth as Sabra’s but it definitely has good flavor!

DSC_0715 DSC_0719

Next layer on low-sodium deli turkey. Two to three slices should do ya’.

DSC_0720

Top the wrap off with creamy fresh avocado slices and pickle slices for a crunchy, salty bite.

DSC_0722 DSC_0724

Roll & slice!

DSC_0725

These wraps will keep perfectly in a Ziploc bag until lunchtime. If you can wait that long to dig in!

Turkey, Avocado & Hummus Wrap

Print this recipe!

Makes 1 wrap

Ingredients:
1 whole wheat tortilla
2-3 Tablespoons red pepper hummus
3 slices low-sodium deli turkey
1/4 avocado, sliced
pickle slices

Directions:

Spread tortilla with hummus, then layer on turkey, avocado, and pickles. Roll, then slice.

DSC_0743

Feel free to throw any and all veggies in your wrap. I just loved the combo of these four ingredients. Nothing overpowered anything else, and it was just so GOOD!

DSC_0748

Supplement with a fresh peach, cherries, or whatever you’ve got in your produce bin for an awesome, easy, well-balanced lunch. :D

In other news…

Yesterday we were rudely welcomed home from our summery weekend getaway from this guy, who’s all – Hey, it’s me! The tree in your neighbor’s yard that turns unseasonably gorgeous about a month too early every year making you panic, thinking summer is already over?! Hiii!

BLERG.

I’m not sure if it’s coming down from a fun weekend on the water, or coming home and seeing this – but I’m not ready for summer to end!

Are you?

I’ve been making this lunch over the summer ALL.OF.The.Time! But I just found out what a world of wonders adding egg whites does to this!

I am a summer-lovin’ kinda girl. I never want to see it end.

Glad you had a blast at the Ozarks!! We love love love our time on Lake Rathbun. This year we have been out most weekends since the beginning of May. You definitely need to think about getting a boat, it’s always a party!

We haven’t ventured to the Ozarks, but our friends go several times each year. It may have to be on our bucket list for next summer!

Your wraps look delicious too. I think I will make a few for lunches this week.

Nope, not ready. I was just bemoaning the fact that my pale skin has not had any color at all since the beginning of 2012 — definitely considering a spray tan just to feel a little more summery and sun-kissed!

I’m not sure if they carry Grandma’s Hummus at the Whole Foods in Iowa, but you have to try it. It’s made in Austin, TX, so they might not have it further north but, seriously, it will blow your mind in garlicy/olive oil goodness.

Ok your going to hate me….but we have a second home on LOTO and we just love it! We do not own one of those 7000 SF mansion you speak of (I wish) but our little cabin gets us on the water all the same. I know exactly where the mansion in your photos is located, we are just a few miles downstream from there. Glad to hear you enjoyed your time coving it out…great PR for the area. Thanks!

Too bad your not here this coming weekend, the big Shootout (fast boats) to keep us entertained. I might have to pack these for lunch next Saturday!

This wrap looks so good, will definitely being making it. I like the idea of adding pickles, mmmm.

Plenty of time left for summer here in the midwest! It is still in the low 80′s into September – so let’s enjoy! :)

  7. Comment Callout

Definitely not ready for summer to end! There are still so many zucchini recipes to be tried, and salsas to be made out of all the tomatoes my parents keep shoveling my way!

I love this wrap – My BF loves making wraps, but he usually piles them with cheese and fatty salad dressings so I never think of them as being too healthy. Not this one! Sounds perfect.

I am SO ready for Summer to end! I love that there’s no school or anything, but it’s just too freakin’ hot. I lovelovelove everything about Fall too. The weather, the colors, the smells, the fashion, and of course the food (especially the food).

What brand of deli turkey do you buy?? Every time I get lunchmeat it seems to have a wet and slimy texture which I HATE! This wrap looks amazing! So the avocado doesn’t brown if you eat a few hours later??

    • Comment Callout

The best deli turkey I found is Boar”s Head. It is a little bit pricey but so worth it.

I finally tried this wrap today for lunch and I loved it. The combination of flavors was excellent. I used brown rice tortilla instead to make it gluten free. My daughter used ham and I used turkey. Both were oh so good.

DOG DAYS at the Lake of the Ozarks. YUM!

My hubby and I have vacationed at “the lake” since we were just high school sweethearts. We were engaged at Bridal Cave in 2009, I rocked a bikini with a (very) pregnant belly last summer, and took our 9 month old baby girl this summer! So many great memories there and so many more to come. So glad you loved “our” summer vacay spot!

    Hi Kristin,

Thanks for sharing the picture of the fall tree!! Please keep showing more fall photos as you get them for those of us who live in Arizona. We don’t get to see the pretty colors of fall down here in the South. I am so ready for summer to be over but will have to wait until November/December for cooler temps!!!

The turkey wrap looks amazing, going to give it a try.

Ben actually made it up on the spot! It was raspberry smirnoff, malibu coconut rum, Rose’s Mojito Mixer, and 7-Up, I believe!

  17. Comment Callout

I love combining avocado and hummus. I often comine the two in salads. I’ve never thought about adding the pickle right into the wrap. I’m not a “big” pickle person, but for some reason with the hummus and avocado; that just sounds delish! I’m somewhat ready for fall. I live in Texas so we’ve been living in the 100′s for quite some time and now with the kids starting school there isn’t much time for all those Summer-fun activities. Plus, I’m looking forward to breaking out the pumpkin. ;)

Mmm that wrap, get in my mouth right now! I don’t even like turkey and I NEED this in my life! That wrap is so beautiful, do you think you can do a how-to post on how to properly roll up a wrap? I try so hard to make my wraps hold together, but it always ends up looking like it was made by someone lacking opposable thumbs.

We went to the Ozarks a few weeks ago, absolutly loved it, it was our first time there and we will be back next year.

You don’t need no stinkin’ “pool saddle”, just take the life vests (which I’m sure you have! wink wink) and stick your legs through the arm holes and JUMP, you just sit in the water & drink your beer as easy as can be. Yea you look like a dork, but just hurry up and get in the water and no one will be the wiser.
