My husband and I recently joined friends for a boat day on Lake of the Ozarks. It was as fun as you probably imagine. #partycovewut

Take me back!

We packed lunch to eat on the boat, including Turkey Avocado Hummus Wraps. They were SO quick and SO delicious that I just had to recreate to share with you here!

Deli turkey is layered on a tortilla with creamy hummus, cool avocado slices, and crispy pickles then rolled and sliced. This wrap proves you don’t have to jam a bunch of ingredients into a dish to make it delicious and craveable.

This combination of simple ingredients is absolutely delicious, and super filling and satisfying too!

Start by slathering a flour-style tortilla with hummus. I really like the flavor of red pepper hummus with the other ingredients, though you can use whatever flavor of hummus you like best.

Next layer on a couple slices of deli turkey.

Followed by freshly avocado and sliced pickles, which add a crispy, salty bite.

Roll & slice!

These wraps keep perfectly in a Ziploc bag or storage container until lunchtime — if you can wait that long to dig in!

Hahaha, what an amazing tree though! After a weekend of 100 degrees that nearly killed me I am actually looking forward for some slightly cooler autumn days.

Lake of the Ozarks is a great place! We live an hour away and just love to make the day trip! One can just forget all their cares on the water! I just love your blog and was so glad you took the time to come to Mid-MO!!

So much fun being on the water! I grew up in florida and we had a boat for a long time but we learned that friends with boats are even better!!

I’m a Missouri girl and live in North Central Missouri (about 2.5 hours from the lake). My husband’s family has a weeks vacation there every year and it is so much fun! I worked there for one summer while I was in college and it was a blast. Glad you enjoyed the Lake of the Ozarks.

  6. Lauren T says:

That looks amazing and so easy! I don’t know if I’m completely ready for summer to be over, although I just started school back up at Iowa so I guess it’s officially over for me. I can’t wait for Hawkeye football though! Go Hawks!

  7. Trisha says:

I am so NOT ready for summer to end. When you posted that tree pic on Instagram, I let out an audible gasp. We don’t have any quite as colorful yet & I hope it stays that way for a bit. I’m just not ready!
Fun weekends like the one you just had are simply the best!

Mmm that wrap, get in my mouth right now! I don’t even like turkey and I NEED this in my life! That wrap is so beautiful, do you think you can do a how-to post on how to properly roll up a wrap? I try so hard to make my wraps hold together, but it always ends up looking like it was made by someone lacking opposable thumbs.

  9. Jace says:

I was in the Ozarks too this weekend :).

I love combining avocado and hummus. I often comine the two in salads. I’ve never thought about adding the pickle right into the wrap. I’m not a “big” pickle person, but for some reason with the hummus and avocado; that just sounds delish! I’m somewhat ready for fall. I live in Texas so we’ve been living in the 100’s for quite some time and now with the kids starting school there isn’t much time for all those Summer-fun activities. Plus, I’m looking forward to breaking out the pumpkin. ;)

Hi. Sounds like a fantastic time! Would you please share that drink recipe, if you have it?? Sounds so good!

    1. Iowa Girl Eats says:

Ben actually made it up on the spot! It was raspberry smirnoff, malibu coconut rum, Rose’s Mojito Mixer, and 7-Up, I believe!

  12. Maura @ My Healthy 'Ohana says:

I love pickles in everything, the crunch and saltiness make sandwiches so much better! These are some of my favorites all combined into one, great idea :)

  13. Lisa says:

Stupid trees. Ugh. Reminding me summer is over…it went so quickly I feel like I missed it!
