My husband and I recently joined friends for a boat day on Lake of the Ozarks. It was as fun as you probably imagine. #partycovewut

Take me back!

We packed lunch to eat on the boat, including Turkey Avocado Hummus Wraps. They were SO quick and SO delicious that I just had to recreate to share with you here!

Deli turkey is layered on a tortilla with creamy hummus, cool avocado slices, and crispy pickles then rolled and sliced. This wrap proves you don’t have to jam a bunch of ingredients into a dish to make it delicious and craveable.

This combination of simple ingredients is absolutely delicious, and super filling and satisfying too!

Start by slathering a flour-style tortilla with hummus. I really like the flavor of red pepper hummus with the other ingredients, though you can use whatever flavor of hummus you like best.

Next layer on a couple slices of deli turkey.

Followed by freshly avocado and sliced pickles, which add a crispy, salty bite.

Roll & slice!

These wraps keep perfectly in a Ziploc bag or storage container until lunchtime — if you can wait that long to dig in!

    Hi Kristin,

Thanks for sharing the picture of the fall tree!! Please keep showing more fall photos as you get them for those of us who live in Arizona. We don’t get to see the pretty colors of fall down here in the South. I am so ready for summer to be over but will have to wait until November/December for cooler temps!!!

The turkey wrap looks amazing, going to give it a try.

  2. Tiffany says:

wowww…those homes are amazing. I wonder how much one of those goes for?

Multi (MULTI!) millions, I’m sure. :(

DOG DAYS at the Lake of the Ozarks. YUM!

My hubby and I have vacationed at “the lake” since we were just high school sweethearts. We were engaged at Bridal Cave in 2009, I rocked a bikini with a (very) pregnant belly last summer, and took our 9 month old baby girl this summer! So many great memories there and so many more to come. So glad you loved “our” summer vacay spot!

  4. Sam @ Better With Sprinkles says:

I’m never ready for summer to be over!

What brand of deli turkey do you buy?? Every time I get lunchmeat it seems to have a wet and slimy texture which I HATE! This wrap looks amazing! So the avocado doesn’t brown if you eat a few hours later??

    1. Vita @ Juicer Depot says:

The best deli turkey I found is Boar”s Head. It is a little bit pricey but so worth it.

    2. Iowa Girl Eats says:

I bought low-sodium roasted turkey from Applegate Farms!

I finally tried this wrap today for lunch and I loved it. The combination of flavors was excellent. I used brown rice tortilla instead to make it gluten free. My daughter used ham and I used turkey. Both were oh so good.

  6. Jess @ JessieBear What Will You Wear says:

I am SO ready for Summer to end! I love that there’s no school or anything, but it’s just too freakin’ hot. I lovelovelove everything about Fall too. The weather, the colors, the smells, the fashion, and of course the food (especially the food).

  7. Katie @ Blonde Ambition says:

Definitely not ready for summer to end! There are still so many zucchini recipes to be tried, and salsas to be made out of all the tomatoes my parents keep shoveling my way!

I love this wrap – My BF loves making wraps, but he usually piles them with cheese and fatty salad dressings so I never think of them as being too healthy. Not this one! Sounds perfect.

  8. Deborah says:

This wrap looks so good, will definitely being making it. I like the idea of adding pickles, mmmm.

Plenty of time left for summer here in the midwest! It is still in the low 80’s into September – so let’s enjoy! :)

Ok your going to hate me….but we have a second home on LOTO and we just love it! We do not own one of those 7000 SF mansion you speak of (I wish) but our little cabin gets us on the water all the same. I know exactly where the mansion in your photos is located, we are just a few miles downstream from there. Glad to hear you enjoyed your time coving it out…great PR for the area. Thanks!

Too bad your not here this coming weekend, the big Shootout (fast boats) to keep us entertained. I might have to pack these for lunch next Saturday!

I’m not sure if they carry Grandma’s Hummus at the Whole Foods in Iowa, but you have to try it. It’s made in Austin, TX, so they might not have it further north but, seriously, it will blow your mind in garlicy/olive oil goodness.

  11. Amy says:

Nope, not ready. I was just bemoaning the fact that my pale skin has not had any color at all since the beginning of 2012 — definitely considering a spray tan just to feel a little more summery and sun-kissed!

  12. Kaelin says:

I am a summer-lovin’ kinda girl. I never want to see it end.

Glad you had a blast at the Ozarks!! We love love love our time on Lake Rathbun. This year we have been out most weekends since the beginning of May. You definitely need to think about getting a boat, it’s always a party!

We haven’t ventured to the Ozarks, but our friends go several times each year. It may have to be on our bucket list for next summer!

Your wraps look delicious too. I think I will make a few for lunches this week.

  13. Lauren says:

I’ve been making this lunch over the summer ALL.OF.The.Time! But I just found out what a world of wonders adding egg whites does to this!

    1. Iowa Girl Eats says:

Ooo – love it! Kind of a breakfast-y spin!
