It’s time for another edition of 5 Minute Lunch!

A 5 Minute Lunch is a meal that can be prepared in 5 minutes or less, stashed in a bag or cooler, then eaten standing, sitting, or on the go later that afternoon. It’s gotta be quick, convenient, and taste good, of course!

On the previous edition of the 5 Minute Lunch, we combined sliced deli turkey with crunchy pickles, cool avocado, and creamy hummus in Turkey, Avocado & Hummus Wraps. Today we’re heading in the same general direction, but taking a slightly more coastal route with Mediterranean Turkey Wraps.

A tortilla rolled up with hummus, deli turkey, and kalamata olives, plus fresh tomato, cucumber, and red onion, is not only full of flavor and protein, but ready in — you guessed it — just 5 minutes!

I love the texture contrast between the creamy hummus, crunchy veggies, and everything in between. You will be thinking about this easy lunch recipe from the moment you make it, to the second you take a bite.

Start by slathering a flour-style tortilla with hummus — any flavor you like. Since we’re giving this wrap a Mediterranean spin, I recommend a red pepper, roasted garlic, or olive tapenade flavored hummus.

Next layer on a couple slices of roast deli turkey.

Now that we’ve gotten the protein part of the wrap taken care of with hummus and deli turkey, it’s time to turn to some fresh produce to jazz it up.

Layer on thin slices of cucumber, tomato, and red onion, plus sliced or chopped kalamata olives.

The trick to making sure your wraps are smooth when rolled up and don’t become soggy by lunchtime, is to slice the veggies very thin and, especially with tomatoes, remove any excess seeds/juices.

Next, start at one end and roll it on up!

Quick and healthy Mediterranean Turkey Wrap takes just five minutes to make and is packed with protein. Fresh, easy, and flavorful!

Ingredients

  • 1 large flour style tortillas
  • 2 Tablespoons hummus, any kind
  • 2 slices deli turkey
  • cucumbers, thinly sliced
  • tomatoes, thinly sliced
  • red onions, thinly sliced
  • 1 Tablespoon kalamata olives, chopped

Directions 

  • Spread hummus over the tortilla then layer on turkey, cucumbers, tomatoes, red onions, and kalamata olives. Roll from one end to another then slice in half.

    The 5 Minute Mediterranean Turkey Wrap is absolutely delicious!!! I skipped the red onion and kalamata olives but added feta cheese for a salty bite. I don’t have a microwave at my job to use, so it’s nice to change my lunch every once in a while. This is the first recipe I made from your blog. Thank you, Kristin!!!! :-)

    This looks so yummy! And i am definitely a hummus lover. :) I also wanted to comment as far as pregnancy and deli meat go…the fresh off the meat from the actual deli counter is much safer than the packaged. I’m no expert but anything packaged always has added things…including nitrates which is why you would stay away from deli meat. :)

    I made these for the hubs and I this week for our lunches and we both LOVED them! The hummus is the star of the show. We use Sabra Supremely Spicy for an extra kick!

    One of my favorite local restaurants has a sandwich similar to this one. They use a pita and put hummus, spinach, sprouts, cucumber, and tomato on it. I have been OBSESSED with it and have taken to making it weekly for my lunches. I’ll have to change it up a bit and add in some onions and maybe trade the spinach for turkey…or just add the turkey in!     The pictures show that the Turkey wrap is delicious and appetizing. I have not tried turkey wrap before but I have eaten Turkey meeat in the past so I guess this is a nice idea. I could not believe that this recipe could be done only for five minutes. It is so nice that it has cucumber, tomato, and red onion, and sliced kalamata olives.

    Maybe the hummus wasn’t a very good brand? Brand makes all the difference! My favorite is also Sabra, unless I’m at Bella Luna’s–theirs is amazing! I have just found they are NOT all made the same, haha :)
