Happy Friday the 13th everyone, muwahaha! I’m pretty sure I’ve used that line every time a Ft13 has rolled around over the last five years, and it never stops being satisfying. #cantstopwontstop

Anyway, since the weekend is officially in sight, and it’s Valentine’s Day weekend at that, I thought I’d share the Gluten-Free Breakfast Pizza with Hash Brown Crust that Ben whipped up for us on a whim earlier this month. He made it up on the spot, aka no recipe, so I made a bazillion breakfast pizzas this week to get the crust to crisp up just right (ok, four.) Still!

This hash brown crust breakfast pizza is gluten-free, hearty, filling, and fit for a leisurely weekend breakfast in bed with coffee and mimosas. Just kidding, does anyone with a toddler enjoy breakfast in bed? That’s got orange juice spilling on Mommy’s iphone while said toddler bounces up and down watching Elmo’s World written all over it. Either way – in bed, at the breakfast table, or hunched over the skillet – surprise your sweetie (or yourself!) with one of these tomorrow morning and start the day off right.

Gluten-free or not, you’re going to love this hash brown crust pizza topped with salt and peppered eggs, bacon, cheese, and chopped veggies including asparagus and mushrooms that tastes like an omelet and breakfast skillet’s love child. Its sturdy hash brown crust is piled high with lots of a.m.-inspired goodies and is just so dang good.

The thing I love best about this breakfast pizza though? You can actually hold it like a slice of pizza! No flimsy vegetable crust to be found – just simple, everyday ingredients baked into something special. Oh and it’s made in just one skillet. I KNOW. You’re gonna love it!

Start with 10oz frozen hash browns, about 3-1/4 cups, that have been thawed.

Once the hash browns have thawed, place them on one end of a kitchen towel then fold the other side over and press out any excess moisture to make sure the crust gets nice and crisp. Don’t be afraid to put your back into it – you won’t hurt the potatoes and the crunchiness of your crust is at stake!

Transfer the dry hash browns to a large bowl then add 2 Tablespoons extra virgin olive oil and dashes of garlic powder and onion powder then mix well to combine. NO salt at this point, because salt draws out moisture and again, we want to keep the potatoes as dry as possible.

Next spread 1 Tablespoon extra virgin olive oil into the bottom of a 10″ cast iron or heavy bottomed oven-proof skillet then firmly press the potatoes into an even layer and bake for 20-25 minutes or until dark golden brown, rotating the skillet 180 degrees halfway through to ensure even browning.

If you only have a skillet that’s larger than 10″, that’s totally fine! Just add enough potatoes to cover the bottom then add a little more. Not an exact science but trust me, it’ll turn out great.

While the hash browns are baking, chop 1/3 cup each fresh mushrooms and asparagus, shred 4oz cheddar cheese, and whisk 3 eggs with lots of salt and pepper.

Also cook 4 strips bacon until they’re still a tiny bit chewy, then chop. I used my tried and true microwave cooking method: place the bacon strips on two layers of paper towels then cover with another double layer of paper towels and microwave for 2 minutes. Check then microwave in 30 second increments until they’re done. Works every time.

Alrighty! Once the crust is ready, season the top with salt and pepper then pour the eggs evenly on top and bake for 1 minute. Add the rest of the toppings – the asparagus, mushrooms, bacon, and cheese – then pop back into the oven for 5-7 minutes or until the cheese is golden brown and bubbly.

Let the pizza sit in the skillet for 5 minutes then use a spatula to help slide it onto a cutting board.

Description

Gluten-Free Breakfast Pizza with Hash Brown Crust is a fun and delicious way to wake up in the morning!

Ingredients

serves 2-3

  • 3 Tablespoons extra virgin olive oil, divided
  • 10oz frozen shredded hash browns (about 3-1/4 cups,) thawed
  • garlic powder
  • onion powder
  • 3 eggs
  • salt and pepper
  • 1/3 cup chopped mushrooms
  • 1/3 cup chopped asparagus stalks
  • 4 slices bacon, cooked then chopped
  • 4oz freshly shredded cheddar cheese
  • 2 green onions, chopped

Directions

  1. Preheat oven to 425 degrees. Drizzle 1 Tablespoon extra virgin olive oil into the bottom of a 10” cast iron or heavy bottomed, oven-safe skillet then tilt or brush the skillet to evenly coat the bottom in oil.
  2. Press thawed hash browns in a kitchen towel to remove as much excess moisture as possible then transfer to a large bowl and mix with remaining 2 Tablespoons extra virgin olive oil, garlic powder, and onion powder, to taste. Transfer to prepared skillet then firmly press into an even layer with your hands and bake until golden brown and crispy, 20-25 minutes, rotating pan 180 degrees halfway through.
  3. Meanwhile, whisk eggs in a large bowl with salt and pepper. When hash brown crust is golden brown, season the top with salt and pepper then pour eggs evenly over the top and bake for 1 minute. Top with chopped mushrooms, asparagus, bacon, and cheese then continue baking until cheese is golden brown and bubbly, 5-7 minutes. Let pizza sit for 5 minutes then use a spatula to help slide onto a cutting board. Slice, top with chopped green onions, and then serve.

Notes

  • If your pan is larger than 10", add enough hash browns to cover the bottom of the pan and then a little more.
