Ben and I have a fun game called every Sunday I ask him what he wants for dinner during the upcoming week, then he responds with one of the following:
“Salmon! With lemon! AND MASHED POTATOES!!” (Enough with the lemon salmon with mashed potatoes! I shriek inside my head.)
A gigantic smile (which means he wants BBQ Chicken Quesadillas.)
“I don’t knoooow. I can’t THINK!” as he puts his head between his hands and squeezes his eyes shut. (Sheesh, it’s as if I’ve asked him to solve America’s debt crisis or something!)
This Sunday, however, was different. On the way home from Ohio yesterday, when he had a 13.5 hour drive to think about it (barf!) Ben had a new response to my weekly challenge:
“Something vegetarian.”
“Oh really!?” I asked, not quite sure I had heard my meat and potatoes husband right, then wondering if I should check his wrist for a pulse or cheeks for a fever.
“Yes.” he said, firm in his request. “I’m going to eat vegetarian for the next 10 days!”
“Ummm, OK.”
I’m not quite sure what brought this on, or how long it’s going to last (especially with a giant vat of my Aunt’s famous Italian sausages in the fridge that we brought back with us!) but for now I will happily deliver on his request for something vegetarian for dinner, with Chipotle Black Bean Burgers. :)
Creamy black beans join smoky chipotle peppers in adobo sauce to create a vegetarian burger that is truly unique and satisfying. The smoky chipotle pepper flavor sets these babies apart from any other bean burger I’ve tried.
Ben’s actually the one who turned me on to the flavor combo. We were at Costco a couple weekends ago, on our tour de sample Saturday, when he spied some Chipotle Morningstar Farms Burgers being demonstrated nearby. Before I could tell him it was a veggie burger, he had popped a piece in his mouth and was raving about it’s flavor. I liked it just as much, so I decided to make this version at home!
Start the Chipotle Black Bean Burgers by assembling zee ingredients:
- Canned black beans
- Red onion
- Canned chipotle peppers in adobo sauce (available in the ethnic foods aisle!)
- Garlic cloves
- Cumin
- Canned corn (or fresh or frozen)
- Chunky salsa
- Panko bread crumbs
- Egg white
Begin by draining then rinsing 1 can black beans, then placing half the can into a food processor.
To the beans add 1/4 small red onion that’s been roughly chopped, and 1 Chipotle Pepper in Adobo Sauce plus 2 teaspoons of the Adobo sauce. CPAS are smoked jalapenos that are wonderfully smoky, and not super spicy.
Next add 2 garlic cloves, plus 1/2 teaspoon cumin and 1/4 teaspoon salt.
Process the ingredients until they’re fairly smooth, scraping the sides a couple of times if you need to. PS you could totally use a potato masher to smash the beans, and finely mince the onion, chipotle pepper, and garlic if you don’t have a food processor!
Scoop the bean mixture into a big bowl, then add the other half of the can of beans on top.
Next add 3/4 cup corn kernels, 1/4 cup chunky salsa, 3/4 cups panko bread crumbs, and 1 egg white.
Shape the black bean mixture, which will be wet, don’t be scared, into 4 patties while you heat a large skillet over medium heat.
Spray the skillet generously with non-stick spray, then slap the patties on and let them cook for 5-6 minutes a side, or until they’re firm on the inside, and golden brown on the outside.
Resist the urge to flip or remove the patties at the first sight of browning. They need a good 5-6 minutes on each side to not only cook the egg, but also to make sure the patties don’t fall apart.
While the patties are doin’ their thang, smash up 1 avocado, garlic powder, salt & pepper in a small bowl with a potato masher.
Place the cooked burgers on a toasted bun (I used a Thin Bun,) then slather with mashed avocado and salsa, if you please!

Chipotle Black Bean Burgers
Description
Chipotle Black Bean Burgers taste like Morningstar Farm's version, except they're fresher, and even tastier!
Ingredients
- 1-15oz can black beans, drained & rinsed
- 1/4 small red onion, roughly chopped
- 1 canned chipotle pepper in adobo sauce, plus 2-3 teaspoons adobo sauce
- 2 garlic cloves
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 3/4 cup corn kernels (canned, fresh, or thawed)
- 1/4 cup bottled chunky salsa, plus more for topping the burgers
- 3/4 cup panko bread crumbs
- 1 egg white
- 1 avocado
- garlic powder
- salt & pepper
- 4 buns, toasted
Directions
- Combine half the black beans in a food processor with the red onion, chipotle pepper in adobo sauce plus extra sauce, garlic, cumin and salt. Pulse until nearly smooth, scraping the sides if needed. (Alternatively you could mash the black beans with a potato masher and mince the onion, chipotle pepper, and garlic.) Remove mixture to a bowl then add remaining black beans, corn, salsa, panko bread crumbs, and egg white, then mix well with a spatula. Mixture will be wet.
- Heat a large flat-top skillet over medium heat then generously spray with non-stick spray. Shape the bean mixture into four patties then cook the patties for 5-6 minutes a side, or until firm and golden brown.
- Meanwhile, mash the avocado with garlic powder, salt & pepper in a small bowl. Place the cooked burgers on toasted buns, then top with the mashed avocado and extra salsa, if desired.

I cannot complain, my husband will eat whatever I cook and rarely ask for anything else. However I do make sure to make pizza every other week for him which is his only request!
My boyfriend and I have been living together for about a year, and he does almost all of the cooking. He’s great at it and loves it! We like to eat healthy and he’s very into cooking from scratch and using lots of vegetables, good meats, etc. The one thing we used to differ more on was the amount of carbs we eat (him more, me less). A few months ago, he heard a presentation from doctors at work about the benefits of decreasing carb intake. Ever since then, he focuses more on protein and veggies. Funny, just like Ben, he once declared a no-meat week for us (after a rather heavy weekend of eating). It was great, but it made me laugh because he loves meat so much!
Yum yum yum! I have been looking for a homemade veggie burger recipe to try, and this looks just perfect! My boyfriend and I have similar eating habits, especially since I started eating red meat again (in moderation) and we just love cooking together (perfect date night)! Also I love love love you blog! I’m a vegetarian but my boyfriend’s a bit of a carnivore. Luckily he’s also a good sport and doesn’t mind eating veggie most of the time. Sometimes if I’m making tofu or something that I can easily replace with meat, I’ll make a chicken version for him, and the rest of the time he just eats veggie. It ends up working pretty well :)
Do you think that these would freeze well? My husband wouldn’t think of eating these let alone actually do it. But I’d love to make these! They look delicious!!!

Sounds yummy! My husband and I are usually on the same page… however, there is 1 ingredient that differs. I love Rotel to help spice things up… my husband can detect it a mile away, and HATES it! :) Goof.

Love it — these look absolutely incredible!! After Thanksgiving last year, my husband (also a meat and potatoes kind of guy) proposed something called “power week” where we ate all veg. We reintroduce it every so often when we’ve over indulged. It feels awesome! Good luck with your power week :)

My husband and I have very similar tastes….we differ on mushrooms, I love them, him, not so much! We try to eat lots of veggies and try new things as much as possible. My kids are 2 and 6 and they both love to try new things.

How does it compare to the Costco Burger? They’re pretty good….
They’re not as firm as the Morningstar Farms burger, because they don’t have rice in them, but the taste is very similar!

It’s so funny that you made those yesterday! I was thinking of making something similar today, and I was going to look up a basic method. We’re on Phase 1 of the South Beach Diet, so I’ll have to eliminate the bread crumbs, corn and substitute the salsa, but I get the gist of it. Oh, and the bun will have to be lettuce. :)

These look delicious! I’ve recently turned vegan so now I’m trying to figure out what to use to bind them together instead of the egg white. But I can’t wait to try these out! Especially when sweet corn is in season!!
You can use ground flax seed in place of egg. Just look online for the ratios.

1 egg = 1 Tbsp. ground flax seed stirred together in 3 Tbsp. water. Let rest 5 mins. Thickens to consistency of 1 egg.
Use this in baked goods too, like corn bread :)

I’ve been wanting to make my own veggie burgers forever, but either haven’t found a recipe or was too lazy. This recipe looks delicious and simple to follow. They are much more fresh than the frozen, pre-made ones at the grocery store which are still full of preservatives. I will definitely have to try it out.
These look delicious! Whenever I make black bean burgers, no matter how long I cook them they seem to be so mushy!! Do these firm up at all, or are black bean burgers just mushy? Haven’t had much luck yet and although the recipe wasn’t the same as this one I still cooked them the same way you did. Ideas?? Maybe I should just give these ones a go :) However, I think my boyfriend has given up on my veggie burger making capabilities as i’ve already made a few too many mushy ones…

I just tried the Morningstar Chipotle Black Bean Burgers (and Costco) for the first time yesterday and I loved this burger! Yours obvi looks so fresh with the guac. and corn added. I’ll have to try these; it’s still a wee bit early for our corn in New England though hopefully it will be ‘ripe’ soon!

Question: I don’t like eggs, so do you have any recommendations for an egg replacement? I’ve heard you could use tahini instead, but how much should I use and where can I find tahini in stores?

I made these for dinner tonight! They were sooo delicious. I didn’t have any chipotle peppers but had all the other ingredients so I didn’t want to make a trip to the store for just one thing. Instead of the peppers and adobo sauce I splashed in some hot pepper sauce and used this Trader Joe’s spice grinder: . It added just the perfect amount of smokiness.
I recently found your blog linked from another blog and immediately started reading the archives. And then immediately made your quinoa veggie skillet for dinner. I made these last night… and I hate beans. I ate two The boy said “you can’t call it a burger if it doesn’t have meat in it” when I delivered him one at work… He came home and asked for another and said he was going to make them again later this week. You have converted us :-)
