Howdy, and happy Friday!
I was up at the b.c. of dawn this morning to cook on our local news station KCCI again. Steve Karlin and I whipped up a super healthy, super tasty, Superfood Salad!
Superfoods are foods that are so nutritious that they have positive impact on your health, like lowering cholesterol levels, and even helping to reduce the risk of some types of cancer. Here’s what I packed into my salad:
Quinoa: A complete protein which contains 8 essential amino acids. High in protein, fiber and gluten-free.
Pomegranate seeds: Pomegranate juice is extremely high in antioxidants. Three times higher than green tea and red wine!
Avocado: High in healthy fats that reduce bad cholesterol levels, and raise good cholesterol levels.
Black beans: Surprisingly high in antioxidants, and a great source of potassium and fiber.
Orange: High in vitamin C, which helps boost and support the immune system.
Red onion: High in antioxidants.
Cilantro: High in antioxidants, and also helps to reduce inflammation.
Corn: …sweet and looks pretty. ;)
The salad was drizzled with homemade Lemon Vinaigrette and topped with sauteed shrimp. I LOVE THIS RECIPE – the pom seeds really make it!

Favorite must-have: Coconuts Becky Riding Boots. I got these bad boys right before Christmas (hello free shipping) and have basically been living in them ever since. They are so comf!
Favorite indulgence: Monster Cookie Dough Dip. NEED THIS IN MY MOUTH!
Favorite DIY: Branch Photo Holder. I adore the rustic-romantic look of this.
Favorite view: Chicken Point Cabin in Northern Idaho. I don’t think I’d ever leave the house if I had a revolving wall that opened to a view like this!
Favorite bite: Buffalo Fries. Kind of like salt & vinegar fries, but better. Much, much better!
Favorite romantic getaway: Floating Dinner on Figi’s Turtle Island. Sigh. :)
Favorite workout: Jillian Michaels’ Jump Start Workout. Do each of 16 exercises for a full minute before moving onto the next. I love quick-yet-effective workouts like this!
Favorite jewelry: Hue-Kissed Cameo Necklace. This necklace is a perfect length, and I love the color. So Spring. :)
Favorite inspiration. I have decided that my future dream home is a log cabin. Ben says they’re too hard to finance, but I say where there’s a will there’s a way!
Favorite tip: Photography Cheat Sheet. Even after shooting with my DSLR (I have a Nikon D3000) for 2+ years, I still sometimes can’t keep everything straight in my mind. Printing this baby out for the fridge.
Favorite weeknight meal: Cheeseburger Salad. From the Pioneer Woman. ‘Nuff said.
Favorite retreat: Round About Deck. I know it’s early, but I’m already itching for patio season!
Favorite inexpensive art: Eighteen25’s Printable Subway Art. I found these ultra-adorable printouts via my sister-in-law’s blog. Â
Favorite bite: Pesto & Cream Cheese Stuffed Cherry Tomatoes. These would be such a hit at a party or shower.
Favorite kitchen must-have: Ceramic Produce Cartons. Aren’t these the coolest?!
Favorite sweet treat: Snickerdoodle Blondies. I have blondies way too infrequently, me thinks. Thinking I should change that, starting with this recipe!

I saw the Jillian Michaels’ Jump Start Workout in SELF Magazine. I pulled it out and placed in my folder of “to do” workouts! Great job on the news today. I googled it when I got into work. I will be giving this a whirl, shrimp for me, chicken for my husby who is allergic to shellfish.

I sent that photography cheat sheet to my boyfriend (the photographer) telling him that I think it’s time for me to start learning how to shoot on a big girl camera. Now if I could only find a student-budget-friendly DSLR… ;)

I have the same camera and have had it for a year and a half and I still have to look up how to switch the settings online every time! Your pictures inspire me… (and remind me that my problem is the operator, not the camera!) :)

We built our Log home and didn’t have trouble financing (but that was 25 years ago…) We do have trouble insuring our house,not every company will insure a log home.

Love love the post! But in regards to what you said about quinoa, “all 8 essential amino acids” there’s 9 essential amino acids ;) idk if there’s 8 in it or if you meant to say that it had all 9 haha.

I adore the wrap around deck but can’t imagine it being useful in South Dakota with rain, mosquito’s and other natural disasters! Now the revolving window looking out at that view would make me a hermit!! Love it!
