The original Mini Corn Dog Muffins! These fun and poppable bites are perfect for snack time, dinner, or game day, and are a hit with kids!

Unless you’ve been living under a rock, you’re aware that the Super Bowl is this Sunday. Although earlier this week I made the epic make the mistake of asking my husband what day of the week it was being played on.
Don’t plan on living that one down anytime soon!
I’ll be watching for the commercials and food anyway, including these bite-sized cuties: Mini Corn Dog Muffins are a hit with any crowd. It is such a fun and simple appetizer recipe!

Mini Corn Dog Muffins
Mini Corn Dog Muffins are the poppable version of a corndog — they are just as delicious as they sound.

Like I said, they make a great game day appetizer, but are also perfect as a fun lunch or dinner for the kids. They freeze well too!

I’ll show how to make a homemade cornbread batter, though using your favorite store-bought mix is even quicker and easier. I prefer Krusteaz Gluten-Free Cornbread.
If making homemade cornbread, star by whisking together melted butter and sugar in a large mixing bowl, then incorporate a couple eggs.

Next, whisk in the ingredient that makes this cornbread ultra moist and yummy — buttermilk. Set the wet ingredients aside.

In a separate mixing bowl, whisk together the dry ingredients including cornmeal, flour (either a gluten-free baking blend, or all-purpose if you don’t need to eat gluten free), baking soda and salt.
Add the dry ingredients into the wet ingredients in two batches, whisking well between each batch.

Spray a mini muffin tin very well with non-stick spray then spoon 1 Tablespoon batter into each mini cup.

Next, cut up the hot dog centers. I like 100% beef Hebrew National Hot Dogs. You could use turkey dogs, if that’s your preference!

Hebrew National’s are longer, thinner hot dogs, so I cut each one into 6 pieces. You’ll want each piece to be about 1″ long.

Finally, place a hot dog piece into the center of each muffin tin.

Bake until the cornbread is set, or according to package directions if using a store-bought mix.

These piping hot, sweet and savory mini corn dog muffins are perfect game-day food!

A dip in cold ketchup really sends the corn dog flavor over the top. I can’t get over how cute and delicious these are!

These are amazing served straight out of the oven, but can be made ahead of time, stored in the refrigerator, and then microwaved for 30 seconds or so when it’s kickoff time.

Ingredients
- 1/2 cup melted butter
- 1/2 cup sugar
- 2 eggs
- 1 cup buttermilk
- 1/2 teaspoon baking soda
- 1 cup gluten free cornmeal
- 1 cup gluten free baking flour blend WITH binder, or all-purpose flour if not gluten free
- 1/2 teaspoon salt
- 8-10 all-beef hot dogs, cut into 1" bites
Directions
- Preheat oven to 375 degrees. Combine butter and sugar in a bowl then whisk to combine. Add eggs then whisk to combine, and then add buttermilk and whisk to combine.
- In a separate bowl, whisk together baking soda, cornmeal, flour, and salt then whisk into the wet ingredients in two batches.
- Spray a mini muffin tin very well with non-stick spray then spoon 1 Tablespoon batter into each mini muffin cup. Place one hot dog bite into the middle of each cup.
- Bake for 8-12 minutes or until cornbread is golden brown. Cool in mini muffin tin for 5 minutes before serving. Store leftovers in the refrigerator then re-heat for 20-30 seconds before serving.
Notes
- Feel free to use your favorite store-bought cornbread mix instead of making your own. I like Krusteaz Gluten Free Corn Bread!

these were great. i’m a dude and i made em! it was easy pezy. brought them over to my aunt and uncle’s and they were a hit! i was worried about making them, since i’m a novice cook, but they were seriously amazing!

I bought the Jiffy corn muffin mix to make these, and they keep on crumbling and falling apart. Any ideas on how to prevent this from happening? Thank you! GO GIANTS!
Eek, I’m not sure – I’ve never tried this with that mix. Maybe try pouring half the batter in a pan (whichever pan the box says to use,) layer in the hot dogs, then add the other half of the batter. Then cut it and eat like regular corn bread?
I used the Jiffy mix as well, however, I used cream corn in place of the milk (same amount) and then added some milk after to get the right consistency. I know this is late, but for future reference.

I’m making some of my Super Bowl food today so I won’t have too much to do on Sunday, and I was wondering if these would still be good if I froze them and reheated them on Sunday. Whatdya think?

This is a great idea! Definitely pinned this and put it on my list of snacks I would love to make. I just found your blog and have really enjoyed clicking around to your different posts–especially the ones on Italy, swoon.
You could take the rocket science out of this by explaining in a few simple steps, consisting of
1. make corn bread following the instructions on the box, or use your own favorite recipe, if you have one.
2. Pour batter into mini-muffin cups, about 2/3 full. Spray the cups if not using papers, to keep from sticking.
3. Place one or more chunks of cut up dogs or fully cooked sausages into the batter, depending on how small you cut them up.
4. Bake, following the directions for the corn bread.
I watch the Super Bowl for the good food, good company, and the funny commercials [and the game?!] :P
P.S. I had an awful experience with corn dogs when I was really young- they were served for lunch when I was at ski school and let’s say they ended up on the mountain an hour late [YUCK, sorry!]. And I never have had one since but your recipes always look so tasty I might reconsider that…

Kristin—Thanks so much for this great recipe! I used Bob’s Red Mill coarse ground cornmeal and it added a great corn-y bite to this muffin. I used halved Trader Joe’s cocktail wieners (all beef, no nitrites) in my muffins and also cut up some Tofu Pups for my vegetarian girlfriend to have in her muffins so we both enjoyed! ;)
Kate—I can’t say for sure whether the blogger in question got the idea to post her recipe after reading this one, and I’m not a regular reader of either one, but I did check it out and her photos appeared to be her own, the text wasn’t Kristin’s, and it looks like her recipe wasn’t exactly the same either. So, unless I’m missing something, it’s not stealing at all.
Now, if she had ganked Kristin’s photos, or posted her recipe verbatim as hers, then it would be stealing, but there’s nothing unethical about posting a *similar* recipe. The idea of a corn dog muffin, while clever, isn’t anything new either. I myself had heard about the idea some months ago, from somewhere, and I just happened to find this blog entry after googling around for recipes.

I can assure you that though the 2 recipes are very, very similar, no thievery took place. They were posted merely hours apart, and it’s just a coincidence. A delicious coincidence at that.
I’m not a follower of “Iowa Girl Eats”, but I will be now! The site is lovely, and obviously we share a similar cooking philosophy =) I love the buffalo chicken poppers too! I tried something similar with phyllo dough, and it was a disaster! Yours look much better.
