Fantastic Fall Dinner

So – I have literally just died and gone to culinary Heaven. Dinner tonight was off.the.charts. and I have AngieinAtlanta to thank! Last week I saw her recipe for Apple & Turkey Sausage in Acorn Squash and knew I had to have it as soon as possible. Based on Angie’s recipe, tonight I made Baked Sweet Potato with Apples & Turkey Sausage!

First I pricked a sweet potato all over with a fork and “baked” it in the microwave for 2.5 minutes on each side.

 

Meanwhile, I peeled and diced a Granny Smith apple and thinly sliced 1/4 of a yellow onion.

I sautéed the apples & onions in 1 tablespoon of EVOO and S&P on medium heat and got out my Turkey Sausage. This was lean, Sweet Italian Turkey Sausage. It’s not actually sweet – I think any sausage that isn’t “spicy” is considered “sweet.” Feel free to chime in if I’m off my rocker! Anyways – I added 2 links to my skillet with the apples & onions.

I rotated the links until they were browned on both sides (~5 mins), then added one minced clove of garlic on top of everything and popped on a lid so the apples & onions could continue to get soft, and the sausage could cook all the way through (~another 5 minutes.)

Serve the apple, onion & sausage over the sweet potato. Dig in and wipe away your tears of joy because this was UNBELIEVABLE!

The natural sugars in the apple caramelize so perfectly, and since you cook this on medium heat – the onions also get really tender and flavorful.

Mixed with the slightly sweet, sweet potato and perfectly spiced Italian sausage – this is one quintessential Fall dinner that I could seriously eat week after week…after week, after week!

Well tonight I’m going to give ANTM another go – hopefully I won’t get offended a la last week…hmph!

Sweet or Regular Potato?!

While I would never turn down a regular potato, I do have a special place in my heart for the sweet variety!

    Sweet potatoes all the way, they’re just so perfect on their own. White potatoes need all sorts of doctoring up to taste good….IMO.

    I would say sweet potato – but a regular potato with some cheese, black beans and salsa is definitely a fave of mine!

    I’m like you, I wouldn’t turn down a regular potato (especially covered in salsa) but I prefer the sweet kind.

    Looks great! Up until last Christmas I would have said regular potato, but my mom made a sweet potato dish that changed my life. I’m all about the sweet potatoes now. :)

  18. I’m totally drooling at that pic. I have some chicken sausages at home in my freezer that I will definitely be trying this for soon.

    And I’m totally a sweet potato fan. I don’t like the blandness of plain potatoes that require lots of butter, cream, etc to make it interesting. I can eat sweet potato plain.

    I bet the apple sausage combo was delish. My mom used to buy these fantastic smoked Applewood sausages that were to die for! Looks like a great fall dish (hooray fall)!
