Fall Baking Favorite – For Breakfast!

Sugar and spice and everything nice – that’s what little girls Baked Pumpkin Pie Oatmeal is made of!

I’ve been meaning to whip up a batch of BPPO the past couple of weeks, but forgetful Frannie here kept forgetting to pick up canned pumpkin at the store. I highlighted and circled it on my list last weekend, so I was sure to remember!

My Pumpkin Pie Oatmeal tastes like the real deal, but with no butter or eggs, and a mere fraction of the sugar. Not saying that I don’t like butter, eggs & sugar in my pie, I just don’t like it in my OATMEAL. ;)

Oatmeal ingredients:

  • 1/2 cup old fashioned oats
  • 3/4 cup water (could use milk)
  • 1/2 cup pumpkin puree
  • 2 teaspoons brown sugar
  • pinch of salt
  • dashes of cinnamon, pumpkin pie spice & vanilla extract.

Topping ingredients:

  • 1 Tablespoon sliced almonds
  • 1 teaspoon brown sugar

Directions:

  1. Preheat oven to 375 degrees. Mix oatmeal ingredients and pour into an individual sized baking dish (here’s how big mine are,) sprayed with non-stick spray. Bake for 10 minutes.
  2. Top oatmeal with almonds & sugar topping and bake for an additional 10 minutes.

Oooo, it’s sooo creamy and luscious. It’d be even more so if you used milk or unsweetened vanilla almond breeze, in place of water, but I was fresh out. Also, I don’t usually add any sweetener to my normal oats, but if you do, I’d add another 2 teaspoons into the mix!

The fab thing about this baked oatmeal is that you can make two or more at a time, then just reheat for 1.5 minutes the next day. Insta breakfast!

You should have smelled the kitchen as this was baking up. So cozy. :)

I was jazzed to see Kashi frozen entrees on sale at the store this week, and even more psyched that I had a $1 off coupon in my purse!

Ie, my favorite frozen Kashi meal Mayan Harvest Bake, which I’m packing for lunch today, was only $2. Score!

Mayan Harvest Bake has big slices of real plantains and sweet potatoes over black beans and whole grain pilaf. The sauce is spicy, but not too spicy.

The pumpkin seeds are my favorite though. They’re such a nice pop of flavor and texture amidst the rest of the creamy ingredients. Soooo, so yummy!!!

I’m usually not a big frozen-foods fan, what with all the added salt, etc., but I recognize all the ingredients in Kashi’s meals and it’s totally fine once in awhile!

Do you play a musical instrument?

I played the piano for YEARS when I was young, and my instructor was even going to teach me how to play the church organ before I quit. Darn 12 year old me for deciding she was to cool and refusing to play anymore. It’d be so sweet to say that I could play the organ!

I also played, wait for it, the oboe, from 5th to 9th grade. Yes, it’s true. My fingers were too small to reach all the keys on the flute, which is what I wanted to play, when they were assigning instruments in 5th grade, so low and behold, an oboe player was born. :mrgreen:

    In fifth grade we started music lessons on our choice of stings and I knew what a violin, cello, and bass were but I had never heard of a viola, so I played it for ten years. Haven’t picked it up in about five now and wish I could still play.

    I played the clarinet in junior high and I was AWFUL! Seriously, I joined band to go on the trips (Washington, D.C.!) and my conductor used to ask me to “pretend” to play at concerts. I really was THAT bad.

    I played the flute from 4th grade through 8th grade. I liked the flute, but felt like you could never hear our parts unless we had a part of the music where only the flutes and clarinets played. My mom played the accordian when she was younger, which she hated at the time, but now wishes she could remember.

    Hahahah! I started off with the saxophone and ended up playing the OBOE!!!! I was the only oboist in all of the junior high schools. You might be the second Iowan oboist I’ve heard of. :)

    I AM a musician. And I love it. I got a degree in piano, but I’ve dabbled in a bunch of different instruments, including the organ!

    I played the piano from age 4 through college, played the clarinet from 4th-8th grade and then the bassoon in high school. I was SUPPOSE to play the oboe but there was only 1 and I asked too late to do it!
    Pumpkin oatmeal looks heavenly-wish I could have smelled your house after baking it!

    I played the flute from 5th grade to 12th grade. Loved it. I don’t think I ever had a choice in choosing the instrument I wanted to play… My two older cousins played flute and they would always want to ‘teach’ me to play when I came over. And I was getting one of their old flutes anyway. So, I went into the 5th grade thinking, “I’m playing flute, I’m so good, my cousins already taught me..” Turns out, I was horrible. Lack of practicing does that to you. But I got better and by senior year I was fourth chair!

    And that baked pumpkin oatmeal looks amazing – I want my apartment to smell like that, right now. Except all our dishes are packed as we are moving today. Speaking of which, I should probably get going. :\

    I played the viola for 8 years and even was chosen twice to play in the annual Side by Side (students side by side with the orchestra members) event at the local philharmonic. At the time, the director was Keith Lockhart who is now the director of the Boston Pops so I really feel honored to have been a part of that.

    I took piano lessons for about a year and a half. Then I started playing the clarinet in 5th grade and I still play now. I’m in my college’s band and its fun.

    2. LOVE the Maya Harvest Bake but those meals never fill me up! I think it’s just a mental thing with frozen meals…no matter how big I’m never satisfied!
    3. I’ve played piano since I was 5, played the accordian (!! nerd alert!!) for a year, and have now played the harp for 15 years! It was part of an Irish dance and music program I was in.

    I played the clarinet for two years (starting in 5th grade) then switched to the French horn and played until I was a sophomore in college. Yes, I was a big band nerd! I also played some percussion for a year.

    No musical talent here. My hubby wants me to learn to play the guitar but I’m not sure I have the patience for it. Maybe this winter… and maybe if wine is involved.

    i love baked oatmeal! i need to make me some soon, thanks for the reminder. i used to play violin & viola. i played from 4-12th grade and kinda wish i kept it up. my parents still have my instruments at their home though so maybe i’ll start up again…

      I played the viola too! My parents also have mine at home, collecting dust. And, like you I always contemplate picking it up again.
      I am so glad it is pumpkin season! I never thought about baking oatmeal, this has been added to my “to try” list.

    I was totally a band geek…..of course I went to a school so small that you were in sports and would have to leave the team at halftime to go play in pep band :) I played clarinet, and yes, I even went to BAND CAMP!

    That oatmeal sounds amazing.

    I’ve played piano since I could sit up, played violin in grades 4-6, tried organ for about five minutes in high school and most recently learned handbells. LOVE handbells. Thinking of picking up a dulcimer…something that can easily move overseas with us.

    I took piano lessons forever, but never really felt like I grasped it…not sure what that was about. I also had a short stint with the clarinet. I was much happier on drill team!

    I played the oboe too. And I hated it. I begged my parents to drop 2Gs on a alto sax for me, which I then played for 4 years. I later hocked it to buy my first car. Priorities, you know.

    And I play the piano (have for 20+ years). My mother taught me to play and coached me through many competitions growing up. I’ll never let that one die. It is so relaxing to sit down for hours and just play. Plus, it makes for lively sing-along parties at my house – haha.

    Oh and I’m awesome at Guitar Hero.

    I finally tried this recipe this morning and it was very yummy! I’m not an oatmeal fan. I’ve always wanted to be but whenever I make it I end up eating a few bites and that’s all I can handle. But I did really like this!

    First, made your Baked Pumpkin Oatmeal with a few variations, and it was a total hit. Will definitely be a fall breakfast food to be enjoyed by all.
    Second, enjoyed your music comments. I took piano lessons when I was in 8th grade when my parents could finally afford a piano, but had to quit for my younger sisters. I “forced” all 4 of my children to take music lessons with varying degrees of results, but I don’t think any of them hate me for it. My daughter held out the longest with 14 years of lessons and my oldest son is still disappointed I let him quit after several years. Sometimes a Mom just gets worn out :-) .
