I’m not freaking out, you’re freaking out! Ok, I’m TOTALLY FREAKING OUT!!!
Ahem. Avocado and Chicken Caprese Salad could not be easier to whip up and is one of the tastiest, most gorgeous, salads to come out of my kitchen. This garden-fresh, protein-packed, Caprese-inspired recipe cannot be beat!
I’m using the word “recipe” very loosely here, by the way, as there’s no real need to measure anything. Just combine diced avocado and chicken breasts with the holy summer trinity of tomatoes, basil, and mozzarella cheese, aka a Caprese Salad. Add lettuce then generously drizzle with reduced balsamic vinegar. I’m telling you, there’s a reason Ree Drummond gave this salad her stamp of approval. It’s as delicious as it is stunning!
How to Make This Recipe:
Start with the chicken. I usually season chicken breasts with homemade seasoned salt and pepper then saute or grill. Leftover rotisserie chicken works great too. Chop the chicken then place it on a bed of romaine lettuce.
Next add cherry tomatoes that have been sliced in half, followed by mozzarella cheese pearls. If you can’t find these mini balls of mozz, chop a large fresh ball of mozzarella cheese into bite-sized pieces.
Next add chopped avocado. I love the creamy texture and cool flavor they add to the classic Caprese mix.
Finally add lots of fresh torn basil plus a heavy drizzle of reduced balsamic vinegar, which will act as the salad dressing.

Description
Avocado and Chicken Caprese Salad is a fresh and filling salad that takes just 20 minutes to make. Packed with summery flavors!
Ingredients
- Romaine lettuce
- Cherry tomatoes, halved
- Avocado, chopped
- Fresh mozzarella, chopped
- Chopped cooked chicken
- Fresh basil, torn
- Balsamic Reduction (see notes for recipe)
Directions
- Top plates of lettuce with tomatoes, avocado, fresh mozzarella cheese, chicken, and basil. Drizzle balsamic reduction on top then serve.

Ummm… I was going to make a cucumber and tomato salad out of the ones I got in my CSA, but I think this is a better idea! I can just toss some of those cukes onto this too. It looks amazing!

So I combined two of your recipes to make one delicious one! I made a salad with greens, tomato, basil, bocconcini, chicken and PEACHES! (my grocery store didn’t have avocado… I know.) However, they DID have already bottled balsamic reduction. Plus it’s made in my teeny tiny hometown of Whistler BC, and with no additives or extra ingredients. So I had to buy it, and it made my salad the most delicious ever. I never instragram food, but I did this salad. Thanks for the inspiration!!!
ps if anyone is wondering, the balsamic reduction is by Nonna Pia’s, and it is amazing. comes in a few flavours too but so far I have only tried the classic. I found it here in Calgary at our local Coop, not sure where else it is sold.
