Anyone mind if we start with the most important course first? You know, dessert?
Ben emailed me this afternoon with a very important message. “I have saved you a brownie.”
To which I replied “WHEEEEEEEEEEEEEEEEEEEE”
His response back? “Real good brownie too… I didn’t even take a bite”
To which I asked “How do you know it’s real good if you didn’t take a bite?!”
I haven’t heard back. Bahahahaha!
I’ve waxed poetic about Ben a zillion times on this blog. Somehow the kindest, most thoughtful man picked me to marry, and I love him for a million different reasons. One of them being, of course, that he saves nibbled-on brownies from work, then brings them home to me. ;)
Since my sweetie is working late tonight, I thought I’d return the favor and have his favorite dessert waiting for him when he gets home. Individual Apple Crisp.
And I put toffee bits in the crisp!

Individual Toffee Apple Crisp
Description
Individual Toffee Apple Crisp is sweet, and decadent yet perfectly portion controlled!
Ingredients
- 1 small apple
- 1/8 teaspoon each flour, sugar & cinnamon
- 1 Tablespoon brown sugar
- 1 Tablespoon old fashioned oats
- 1-1/2 teaspoons flour
- 1-1/2 teaspoons cold butter
- 1 teaspoon toffee bits
Directions
- Preheat oven to 375 degrees. Peel then chop apple into small, 1/4" cubes. Toss with flour, sugar and cinnamon in a small bowl, then pour into a non-stick sprayed, individual-sized baking dish.
- In the same bowl combine brown sugar, oats, flour, cold butter and toffee bits. Smush with your fingers until butter is well distributed among the ingredients. Top apples with the mixture and bake for 15 minutes, or until crisp is golden brown.

Ok, let’s be honest…I made an individual-sized serving for myself too. I had to let you know what it tasted like, right?! It was perhaps THE best apple crisp I have ever made. The toffee bits turned caramel-y and chewy as they baked. And it clocked in at under 250 ultra-satisfying calories. Sweet!

Thanks for convincing me to make this, you are by the way quite convincing. I have wanted to make carnitas FOREVER and this skinny version is going to be my first! To answer your question what I love most about my husband is how much he loves his family- meaning me too- family first shows a lot about a man to me. Thanks again for sharing the carnitas!

I love that my boyfriend “gets me”. He notices things about me that I didn’t think anyone would notice. He loves me more than I deserve, or even understand, and it’s AWESOME. We’ve had lots of great laughs and hey, he’s a Hawkeye!

My soon to be husband (March 30, 2012) is super smart and can make anything interesting. He tells the best stories. He makes me laugh and puts up with my silly sense of humor. The best part is he has no idea how wonderful he is and is always shocked that I think so.

My husband is the most kind and selfless person I know! In any situation he always saves me the last bite, tells me everyday and night that he loves me! I couldn’t have asked to meet a better man to spend the rest of my life with. Plus he loves your blog just as much as I do! :) great post!

hmmm… i would have to say my hubby’s patience. i can be a handful at times (as i think all females can!) and he takes a deep breath, and just rides out my craziness!
love this single serving dessert… i’m always looking for new ideas. i LOVE dessert, the husband does not, so individual recipes help me keep my own portion in check :) a whole batch of cookies does not stand a chance in my kitchen.

I LOVE that my husband is cool as a cucumber under stress. We are complete opposites that way! And what I love most about myself…I think I do a good job of making people feel included and part of the group. No one left behind! :-)

That is a hard question… Man… OK what i love most is that my husband makes me laugh every. single. day… no matter what we are going through. He is such a big kid at heart and I love it. I can’t wait to see him someday as a dad. I know he will be a great one! Btw, your apple crisp looks awesome.
