Growing up I had the same hobbies and interests as other kids my age like dance, soccer, reading, gymnastics and the like, as well as some, well, nontraditional hobbies.
Hobbies like collecting anythingandeverythingrubberstamps in herds of caboodles, including one just for my embossing powders which you could sprinkle over wet-stamp ink, then hold over a hot burner causing it to melt and solidify into a 3-D shape of the stamp. Yeeeah.
Hobbies like imagining different career paths for myself than researching everything I could to learn more about them. FYI if you ever need to know what it takes to become an astronaut-dentist-phone switch operator at the White House, I’m your woman.
Hobbies like writing fan mail to “celebrities” like the Queen of England, Arsenio Hall, and, wait for it, Dave Coulier from Full House. Uncle Joey! Like, couldn’t I have at least written to hunky Uncle Jesse? And Arsenio Hall? What did I even say in his letter? I like your fist pump??
The craziest part is that “they” all wrote back. That’s right, I definitely had signed headshots of Uncle Joey, Arsenio, and the Royal Family taped to my closet door, right next to Jonathon Taylor Thomas and Kirk Cameron. Didn’t you?
Anyway, I have a new fan letter to write, and it’s addressed to Lazy Girls Ravioli Lasagna. The letter shall read something like this:
Dear Lazy Girls Ravioli Lasagna, Hi. My name’s Kristin, and I’m your biggest fan. The way you layer marinara sauce, frozen ravioli, seasoned ground beef, and cheese, then come out tasting like I slaved over a traditional lasagna all day tickles me pink.
See, lasagna is one of my favorite comfort foods, but sometimes I just to don’t want to take the time to boil a box of noodles, mix up a batch of cheese filling, then get all messy layering everything together. Your muss and fuss-free shortcut of using frozen cheese ravioli to bypass these steps is not only time saving, but absolutely delicious.
Nobody knew the difference and I took all the credit. You’re the best.
Write back soon! Love, IGE

Lazy Girl’s Ravioli Lasagna
Description
Lazy Girl's Ravioli Lasagna uses frozen cheese ravioli in place of boiled noodles and cheese filling. Total time saver, and nobody will know the difference!
Ingredients
- 1lb lean ground beef
- garlic salt
- pepper
- 24oz marinara sauce
- 1-1/2lbs frozen mini cheese ravioli (Do not thaw. Could use normal sized ravioli too)
- 6oz shredded mozzarella cheese
Directions
- Preheat oven to 400 degrees. Brown ground beef in a large skillet over medium-high heat, seasoning with garlic salt and pepper, until no longer pink. Drain then return to the skillet and set aside.
- Spread 1/4 cup marinara sauce in the bottom of an 8x8 baking dish. Add 1/3 the frozen ravioli, ground beef, sauce, and cheese. Repeat layers two more times.
- Cover with a sheet of non-stick sprayed foil then bake for 1 hour. Remove foil then bake for 10 more minutes, or until cheese is golden brown and bubbly.

Hearty, easy, and so, so yummy!
Oh, my. Grocery list made out for tomorrow. 3 meals – starting tomorrow – Husband’s Delight Casserole, Beefed Up Ramen Noodle Bake, and Lazy Girls Ravioli Lasagna. I don’t have time for recipes that require a lot of ingredients or long prep time. These sound perfect. And delicious. Thank you.
I’m so glad you’re finding recipes that work for you and your family, Lois!

I saw the jar from Gino’s sauce and thought how great it would be to be back in Des Moines where you can get Gino’s and Graziano’s sausage, shop at Taste of Italy in Windsor Heights or Grazie’s on the South Side. I am going to cook this tonight, perhaps with my homemade sauce that uses Graziano’s Italian seasoning (I buy it in bulk so I always have it in Indiana!).

This recipe is probably from before you were diagnosed with Celiac Disease, but I was wondering if you have made a gluten free version of this? I always loved ravioli, but have struggled to find some that are gluten free.
This recipe is awesome! I’ve made it twice in the last couple of weeks and the kids ( 6 and 4 yrs old) love it! I just made my third one to take to a friend that just had a baby. I’m leaving it in the fridge all night and all day tomorrow and taking it to her late afternoon. What temperature and how long should she bake it? Thanks!
I’m so glad to hear it, Lucila!! I’ve never baked the casserole from the refrigerator, though I’m guessing she’ll want to bake covered for maybe 30 minutes? Just until everything is warmed through.
This is such a great recipe! I love it as is, but I often make a vegetarian version with zucchini and spinach that’s just as delicious. Thanks so much for the idea!

Made this last night and we ate it for leftovers tonight. What a hit! My family loved it and it really was easy peasy. I mixed in some pesto with the beef as well – very tasty. Thanks so much for a new family favourite!
So glad you all enjoyed, Erane, thank you for the great feedback!
[…] STICK TO THE GROCERY LIST We are so great at letting our eyes shop for us sometimes and we just want to grab whatever looks good as we walk down the aisle. So we started planning out some meals in advance and kept each other accountable as we asked “do we really need this?”. I mean spinach dip and Greek veggie dip are too similar to really both be necessary. Pinterest is a great source for big meals. Here are some recipes that don’t need to many ingredients (more ingredients, more money!). Here are some of my favorites: Thai noodles, Shepard’s Pie, Ravioli Lasanga. […]

Thank you for sharing this recipe! My mom’s co-worker told her about the recipe and my mom told me about this recipe. :) I made it for my family it tonight. I couldn’t try it cuz I’m GF and didn’t want to fork out the cash for the GF kind. My family gave it rave reviews! Mine bubbled over a bit. So, next time I’ll put something under it. :)
Great recipe! My 17 year old daughter wanted lasagna for dinner so I searched up a quick way to make it (didn’t want to buy frozen pre-made). I had her make it and now she has a meal she can make on her on when she is away at college-steps were really simple. Delicious!
I tried this last night and it was yummy! The picky husband and daughters enjoyed it too.
It’s definitely a recipe worth printing out to have again.
Thank you!
