Growing up I had the same hobbies and interests as other kids my age like dance, soccer, reading, gymnastics and the like, as well as some, well, nontraditional hobbies.

Hobbies like collecting anythingandeverythingrubberstamps in herds of caboodles, including one just for my embossing powders which you could sprinkle over wet-stamp ink, then hold over a hot burner causing it to melt and solidify into a 3-D shape of the stamp. Yeeeah.

Hobbies like imagining different career paths for myself than researching everything I could to learn more about them. FYI if you ever need to know what it takes to become an astronaut-dentist-phone switch operator at the White House, I’m your woman.

Hobbies like writing fan mail to “celebrities” like the Queen of England, Arsenio Hall, and, wait for it, Dave Coulier from Full House. Uncle Joey! Like, couldn’t I have at least written to hunky Uncle Jesse? And Arsenio Hall? What did I even say in his letter? I like your fist pump??

The craziest part is that “they” all wrote back. That’s right, I definitely had signed headshots of Uncle Joey, Arsenio, and the Royal Family taped to my closet door, right next to Jonathon Taylor Thomas and Kirk Cameron. Didn’t you?

Anyway, I have a new fan letter to write, and it’s addressed to Lazy Girls Ravioli Lasagna. The letter shall read something like this:

Dear Lazy Girls Ravioli Lasagna, Hi. My name’s Kristin, and I’m your biggest fan. The way you layer marinara sauce, frozen ravioli, seasoned ground beef, and cheese, then come out tasting like I slaved over a traditional lasagna all day tickles me pink.

See, lasagna is one of my favorite comfort foods, but sometimes I just to don’t want to take the time to boil a box of noodles, mix up a batch of cheese filling, then get all messy layering everything together. Your muss and fuss-free shortcut of using frozen cheese ravioli to bypass these steps is not only time saving, but absolutely delicious.

Nobody knew the difference and I took all the credit. You’re the best.

Write back soon! Love, IGE

  • 24 oz marinara sauce
  • 1-1/2 lbs frozen gluten free cheese ravioli
  • 6 oz shredded mozzarella cheese

This is such a great recipe! I love it as is, but I often make a vegetarian version with zucchini and spinach that’s just as delicious. Thanks so much for the idea!

Made this last night and we ate it for leftovers tonight. What a hit! My family loved it and it really was easy peasy. I mixed in some pesto with the beef as well – very tasty. Thanks so much for a new family favourite!

So glad you all enjoyed, Erane, thank you for the great feedback!

  3. Michelle says:

Thank you for sharing this recipe! My mom’s co-worker told her about the recipe and my mom told me about this recipe. :) I made it for my family it tonight. I couldn’t try it cuz I’m GF and didn’t want to fork out the cash for the GF kind. My family gave it rave reviews! Mine bubbled over a bit. So, next time I’ll put something under it. :)

  4. Shantel says:

Great recipe! My 17 year old daughter wanted lasagna for dinner so I searched up a quick way to make it (didn’t want to buy frozen pre-made). I had her make it and now she has a meal she can make on her on when she is away at college-steps were really simple. Delicious!

  5. Trish says:

I tried this last night and it was yummy! The picky husband and daughters enjoyed it too.
It’s definitely a recipe worth printing out to have again.
    Thank you!

  6. Megan says:

This was absolutely, fabulously delicious! My boys are picky eaters, but were raving about how good this smelled and how great it tasted! Thank you!

  7. Nicole says:

I’m sure this will be delicious because all of your recipes are but this DOES NOT fit in an 8×8 baking dish. :( currently airing out my house in 20 degree weather because the lasagna is spilling out all over the oven and burning and making a huge mess. I should have known not to fill it up. I do know better but just wanted folks to know not to do what I did!!

  8. Kathy Modic says:

I made this for dinner tonight, it was soooo good! We now have a new favorite lasagna, this is a winner!

  9. Tiffany says:

Has anyone tried this using shredded chicken? I wonder how that would be

  10. Anna says:

I put this in the oven and then left to pick up my son at school. When we got home 30 minutes into the 1-hour cooking time, my house was full of smoke from all kinds of sauce boiling over the pan and burning on the bottom of the oven. So, if I make this again I think I might lower the oven temp to 375 and put a tray under the pan. We did all like the dish even though we dined in a smoke scented house.

I have a client who likes to try new recipes and I stumbled across this one and printed it out for her. She raved so much and was on her second time making it, so I decided to try it myself. So easy. My BF and his son loved it. Gave some to my mother and she loved it, too. This one’s a keeper. Thank you!

  12. Polly says:

Kristin, This was absolutely brilliant, and delicious. I had to improvise with the ingredients I had on hand. We had the same brand of frozen tortellini, one small jar of marinara, and one small jar of alfredo. I made half the pan red sauce, and the other alfredo. It was fantastic, and our family loved it. I can’t believe how excited I am for leftovers at lunch. We’ll be making this regularly from now on. Thank you!

So…the oldest went back for seconds and the 17yo said this morning that it was really good. I used a little bit bigger dish than an 8×8 and next time I’ll Pam the sides because some ravioli stuck. Maybe add more mozzarella and do a standard size ravioli instead of the minis (not enough cheese in the minis IMHO). Still wonderfully delicious though. Thank you.
