Once upon a time there was a 22 year old girl with a great full-time job who decided she wanted a part-time gig during the holidays working with chocolate, because she just loved it so much. It was all she ever thought about. Baking brownies, yards of sheet cakes, and of course all things fondue, so she applied at a local chocolate shop and was hired on the spot.
“Are you SURE you want to work here?” the owner asked the girl, whose resume was filled with agency internships and a marketing degree. “Oh yes.” she confidently replied.
See, the girl had big dreams about what she’d accomplish at the chocolate shop. First she’d learn how to make custom chocolates. Maybe try her hand at decorating them, too. And of course she’d get to take home gobs of chocolate truffles for free at the end of each shift. What if she did so well that she could quit her full time job and became the next Jacques Torres? Oh, the possibilities!
Well, I’m sure you can guess what that 22 year old girl with ZERO culinary experience ended up doing during the holiday rush at her local chocolate shop. NOT making custom chocolates, CERTAINLY not hand decorating them, AND paying full price for each chocolate truffle she took home.
Ok the jig is up, the girl is me. Yes, I love chocolate (and food!) so much that I voluntarily gave up my holiday weekends when I was 22 years old and living in Minneapolis to work at a chocolate shop, where the closest I got to becoming a master chocolatier was scrubbing chocolate-streaked bowls for the entire duration of my 6 hour Saturday shifts. I will say though, that hot water + Dawn + chocolate still smells amazingly like hot chocolate which made being stuck elbow-deep in brown suds seem not all that bad.
Fast forward 10(ish) years later and I’ve got literal sweet redemption in the form of Triple Chocolate Brownie Truffles. No need to get a part-time job at the local chocolate shop scrubbing your Saturdays away, because these sinfully delicious treats are easily made right at home, and are perfect for Valentine’s Day gift-giving!

Enjoy Life is a staple brand in our household since I of course can’t eat gluten on account of having Celiac Disease, and also because Lincoln is allergic to dairy. Not that we eat a ton of sweets in our house, and I especially limit Lincoln’s intake, but to know that there’s a brand with products we can both eat that also taste delicious is such a blessing. There are so many icky allergy-friendly foods on the market that it’s rare to find a brand whose products are safe AND yummy. We are mega fans!
Don’t believe me? Just ask this little chocoholic who helped me makes these brownie truffles! (I’ll spare you the picture of his post-truffle, chocolate-stained teeth, which I assume only a mother could love!)
Start with a box of Enjoy Life Brownie Mix which, as I mentioned, is not only free from the top 8 food allergens, but each serving of brownies has 5 grams of protein and probiotics, too! WHAT?!
Add a couple Tablespoons oil plus water to the mix then pour into an 8×8 baking pan and under-bake just a few minutes to ensure the truffles are ultra fudgy.
Once the brownies have cooled, slice off any crispy edges then use a fork to crumble the whole pan up. This will feel equal parts wrong and oh so right. Kind of sad/fun to destroy an entire pan of brownies, alas we have bigger plans for them – like adding more chocolate! That said, add 1/2 cup Enjoy Life Mini Chips then mix with a fork until just combined.
These mini chips are semi-sweet, versus the dark chocolate we’ll dunk the truffles in, and give each bite just the right amount of sweetness. I also melted some of these to drizzle over the top of the finished truffles.
Next use a Tablespoon cookie scoop to scoop out the brownie mixture then roll into balls. Fun fact: real truffles (like of the fungus variety!) are all different sizes of oddly-shaped spheres so don’t be sad if your chocolate ones resemble the real ones. Tell people you’re going for an “authentic” look. Especially good to keep in mind if your kiddos are helping you scoop and roll!
Next, we seek the third chocolate source in our Triple Chocolate Brownie Truffles – Enjoy Life Dark Chocolate Morsels. We exclusively use these in our house when making recipes that call for chocolate chips. They’re super yummy and I love that the chips are 69% cacao, so on the dark side, but not too dark nor bitter.
Pour the entire 9oz bag Dark Chocolate Morsels into a small bowl then microwave in 30 second increments, stirring between increments, until the chocolate is melted and smooth. Drop each brownie truffle into the chocolate then use two forks to jiggle the extra chocolate off and transfer to a parchment paper or silpat lined baking sheet.
Top the truffles with the embellishments of your choice – candy hearts, sprinkles, etc., then pop the entire baking sheet into the refrigerator until the chocolate has set. If you want to drizzle melted chocolate over the top, do so after the chocolate has set. By the way, I chose candy hearts instead of sprinkles because I couldn’t find any that were gluten-free at the grocery store. If you don’t need to eat GF, buy the sprinkles of your choice!
Last stop – your Valentine! Nestle the truffles into mini cupcake wrappers to deliver, or set a bunch out on a pretty and festive platter. I hope you LOVE these easy, food allergy-friendly, MEGA chocolatey treats!

Description
Triple Chocolate Brownie Truffles are decadent yet super easy, and free from the top 8 food allergens. A must-try for chocoholics!
Ingredients
- 14.5oz box Enjoy Life Brownie Mix (plus oil and water called for on box)
- 1/2 cup Enjoy Life Mini Chips
- 9oz bag Enjoy Life Dark Chocolate Morsels
- Embellishments: candy hearts, sprinkles
Directions
- Bake brownies according to package directions, under-baking them a few minutes, then let cool and slice off any crispy edges. Crumble cooled brownies with a fork then add mini chips and mix until just combined. Scoop out brownie mixture with a Tablespoon cookie scoop then roll into balls and place on a silpat or parchment paper-lined baking sheet.
- Add dark chocolate morsels to a small bowl then microwave in 30 second increments until fully melted, stirring between increments, 2-3 minutes. Use two forks to dunk truffles into melted chocolate, jiggling the fork to remove excess chocolate. Place back onto silpat or parchment paper then add candy hearts/sprinkles. Place baking sheet into the refrigerator until chocolate has set then serve.

these look great…i am a chocoholic that is both gf & df. but here’s the irony…i am highly allergic to enjoy life chips. i tried them & my allergies went berserk after 2. i will try these tho with simple mills brownies & pascha chips (my addiction).

Should these remain refrigerated after they set up or can they live on the counter?
Either! Since the chocolate chips don’t have any added stabalizers (the ingredients are just unsweetened chocolate and cane sugar ??) they shouldn’t be packaged together in a bag or anything, but they can definitely sit out at room temp.

You bet! Just make sure you don’t use the “low-fat” swap some brownies suggest on the back of the box, as it will make the brownies more cake-like vs fudgy and they won’t stick together.
