I am this excited to share today’s Week of Thanksgiving Favorites recipe with you: Party Potatoes Deluxe!
Look up “irresistible” in the dictionary, and you’ll find this creamy, cheesy, crunchy side dish.
Party Potatoes Deluxe is my Mom’s specialty potato dish that she serves every year for every major holiday.
Thanksgiving, Christmas, Easter, and every special occasion in between are not complete unless there’s a big, bubbling casserole dish of these cheesy potatoes present.
I can’t remember a single holiday over the last 25+ years where it hasn’t been served!
In case you haven’t guessed, butter puts the deluxe in Party Potatoes Deluxe — and the party for that matter. It gives the creamy dish a rich and decadent flavor, and the crushed cornflake crumbs on top an audible crunch.
That said, this ultimate potato dish is definitely a bit high on the calorie scale, but for a special holiday, it’s worth the splurge.
While mashed potatoes and gravy will always have their place at the Thanksgiving table, my family will always make room for Party Potatoes Deluxe!

Equipment
Ingredients
- 1/2 cup butter, divided
- 1 lb country-style diced frozen hash browns, thawed
- 1/4 cup green onions, chopped
- 1/2 cup sour cream
- 1 cup shredded sharp cheddar cheese
- 1/2 can condensed cream of chicken soup
- 1 cup crushed corn flakes
Directions
- Preheat oven to 350 degrees. Melt 1/4 cup butter in an 8x8 casserole dish in the oven while it heats.
- Meanwhile, combine hash browns, green onions, sour cream, cheese and soup in a large bowl. Scoop the mixture into the casserole dish over the melted butter then bake uncovered for 30 minutes.
- Melt remaining 1/4 cup butter in a small mixing bowl in the microwave then add crushed cornflakes and stir to combine. Sprinkle evenly on top of the potatoes then bake for 15 more minutes.

okay ige – have you ever tried this recipe (evil evil) – with French’s fried onions instead of cornflakes? – Oh yeah baby!
Life is so odd – you think, oh – I’m grown up and this is who I am – bam! Our daughter won’t be home for turkey day, wow, huh? – and bam! first foreclosure and the the big storms this year have driven us into an apartment. We have changed and I kind of like it. :)

My mom makes the exact same ones – but we just call them “those delicious potatoes with the cornflakes on top.” ;) They are amazeballs!!!!
We make a similar recipe but I think it’s known as hash brown casserole? So very good! My life is very different from one year ago. THis time last year I was working a different job (adoption social worker) and starting treatments with a fertility Dr. to help us get pregnant. Now I am a nanny for two adorable kiddos and I AM pregnant. Blessed!

I love those type of potatoes! I have never made them but my Mother in Law does often and I always eat extra ;)
Nothing is too different from last year at this time, except that I am taking a break from running and trying to add more weight routines into my workouts. Everything else is the same old.
We call those Corn Flake potatoes at my house, and my mom’s recipe is slightly different (though not much!) from yours. It seems like everyone has their own variation on it. We request it practically EVERY time we go home! ;)

I have had those potatoes at many a church function, so yummy! My life has drastically changed from a year ago, I now have a child :)
Anything with butter, potatoes and crushed cornflakes is awesome in my book! As is the word blergh. I wonder if I could get away with making those for Thanksgiving this year, instead of regular mashed potatoes….
We make these too – every year! With the exception of the green onion. We just call them fatty potatoes. I was told they are called “sexy potatoes” too. I like that name best! :)
I love all of the different names of them… we called it Potato Bake at home :)
