I am this excited to share today’s Week of Thanksgiving Favorites recipe with you: Party Potatoes Deluxe!
Look up “irresistible” in the dictionary, and you’ll find this creamy, cheesy, crunchy side dish.
Party Potatoes Deluxe is my Mom’s specialty potato dish that she serves every year for every major holiday.
Thanksgiving, Christmas, Easter, and every special occasion in between are not complete unless there’s a big, bubbling casserole dish of these cheesy potatoes present.
I can’t remember a single holiday over the last 25+ years where it hasn’t been served!
In case you haven’t guessed, butter puts the deluxe in Party Potatoes Deluxe — and the party for that matter. It gives the creamy dish a rich and decadent flavor, and the crushed cornflake crumbs on top an audible crunch.
That said, this ultimate potato dish is definitely a bit high on the calorie scale, but for a special holiday, it’s worth the splurge.
While mashed potatoes and gravy will always have their place at the Thanksgiving table, my family will always make room for Party Potatoes Deluxe!

Equipment
Ingredients
- 1/2 cup butter, divided
- 1 lb country-style diced frozen hash browns, thawed
- 1/4 cup green onions, chopped
- 1/2 cup sour cream
- 1 cup shredded sharp cheddar cheese
- 1/2 can condensed cream of chicken soup
- 1 cup crushed corn flakes
Directions
- Preheat oven to 350 degrees. Melt 1/4 cup butter in an 8x8 casserole dish in the oven while it heats.
- Meanwhile, combine hash browns, green onions, sour cream, cheese and soup in a large bowl. Scoop the mixture into the casserole dish over the melted butter then bake uncovered for 30 minutes.
- Melt remaining 1/4 cup butter in a small mixing bowl in the microwave then add crushed cornflakes and stir to combine. Sprinkle evenly on top of the potatoes then bake for 15 more minutes.

Those look amazing! I was just thinking about the year difference…my now-husband proposed on Nov. 21 last year and took me totally by surprise, so a year ago today, I was just hanging out with my boyfriend, getting ready for our first trip to Disney World together over Thanksgiving! Little did I know. :)

Love the potatoes–except I usually have about 1/3 of the pan on my plate, not a tiny scoop like yours! We do make them with light or reduced fat sour cream and they taste the same, don’t use fat-free or they will turn out –not right!
My mom makes a totally similar casserole too!!! It’s one of my favoriteeeeeee holiday treats for sure :)
I make those, but with crushed lays potato chips instead of cereal. A million times better.
Life is pretty much completely different from a year ago…we moved to a new city in a different state, we are not working our crappy jobs anymore and my husband now has a job position that will lead to advancement, etc…life is pretty darn good at the moment! : )

My family calls these Heart Attack Potatoes. :) But they are SOOOO good! (I always make them with reduced fat sour cream and soup and they are still to die for)

Oh…wow. My jaw hit my desk. Just reading about the “crunch” made me want to make a batch right now! Nothing beats a mean batch of crunchy, cheesy potatoes.

I’ve never tried it! Too afraid to mess with such a good thing, but I bet it wouldn’t be bad!
That’s my husband’s favorite dish! He can eat a whole pan himself. Our recipe (cheesy potatoes) is slightly different – either use sour cream (8oz) and a packet of onion soup mix or the pre-made french onion dip.
I’ve never seen potatoes like this before! It looks really yummy! :)
