If the 1000 Awesome Things blog doesn’t have “Walking into your house after a long day of work, to the smell of dinner bubbling away in the crock pot” – well, it really should.
Today, the smell of the easiest crock pot recipe known to man greeted me at my front door. It said: “I know you’ve had a long day, but don’t worry. I’m here and I’m all ready for you to eat. Don’t you love me?” I DO! I do love you!
During the course of the day, my thoughtful crock pot cooked up some Shredded BBQ Pork Sandwiches!
All I did was take 1 pork shoulder roast, cut it into big chunks and threw it in the crock pot with 1 packet of dried onion soup/dip seasoning, 1/4 cup balsamic vinegar and 1/2 cup water. I cooked it on low all day (7am-5pm) and when I got home from work, all I had to do was remove the pork from the liquid in the crock pot, shred it all up and add BBQ sauce!
The thing about crock pot meals is that they’re supposed to be easy. Therefore it makes no sense to me when I see crock pot recipes that have 15 ingredients and involve the stove or oven in addition to the crock pot. Hmmm, I’ll stick with my no muss, no fuss 3 ingredient recipe, thank you very much!
I sandwiched the shredded ‘Q in between a toasted, whole-wheat English Muffin. Dy.no.mite.
Fun Fact: there’s one vegetable in the world that I like canned as much as I do fresh – green beans! There’s something about the soft texture that I just love – plus I grew up eating them!
Seriously – this meal deserves an I Freaking Love award. I think I said it about 20 different times, about every part of the meal…the Chewy English Muffin, the Tangy BBQ Pork, the Nostalgic Green Beans. YUM YUM YUM!!
In other news, I hit the gym after work today! I ran for 30 minutes at 6.6 and kicked it up to 7.0 for the last two minutes. That’s fast for my short-ay legs! Then I power walked for 15 minutes while watching the most depressing Oprah show I think I’ve ever seen…did anyone else catch it? Basically…it made me really happy that I have the family and life that I do. Money cannot buy you happiness, sobriety, safety or real love. Remember that people!!

The smell in the house is the best thing ever.
I made ham bone chili last year. It was just beans, tomato sauce, spices, and a ham bone in the crock pot all day. It was so tasty, the ham bone even broke in half it had gotten so soft!
There is nothing better than a crockpot when it comes to cooking. Cheap and easy. Today actually I had southwest sweet potato soup going in it all day. I was home sick so it was yummy to smell it cook all day. I love it!
My favorite thing is crock pot chili with two cans of kidney beans rinsed, a can of tomato sauce, some salsa, chili powder, and onions and corn. Sounds like a lot of ingredients but I seriously put together in 5 minutes yesterday because we didn’t have time to cook later. And that 5 minutes was chopping the onion.
I have so many crock pot recipes planned for the christmas season when we run like crazy and have no time to cook.
I’ve been getting all excited to use my crock pot now that fall is upon us. I downloaded an iPhone app that is solely dedicated to slow-cooker recipes. So many good ones to choose from, I just can’t decide.
I always have this unnatural fear of burning the house down so I still get a little apprehensive when I walk in the door…the smell really is unbeatable though.
I have yet to bust out my crock but I am TOTALLY looking forward to it! I hear you on the stove top/many ingredients….that is always confusing to me, why must I brown things before putting them in crockpot? That defeats the whole purpose!

I need to pull out my crockpot for more things! I currently have only used it to make the most amazing Buffalo Chicken Dip known to man. I love pulled pork and Mike loves it even more, so this is a must try.
And, omg, I thought I was the only one who felt this way about canned green beans. I like them MORE than fresh

Yep – just did one myself last night. Chicken Cacciatore – threw in some egg noodles when I got home and wala! – a great family meal. Nevermind that my house smelled AMAZING!!!
Keep the crockpot meals coming! It’s great for us busy moms on the go!

Just wondering, what’s your BBQ sauce of choice?
I’ve tried the crockpot with a chuck roast – use dried beefy onion soup mix, water, vinegar then throw some mini carrots and chunks of potatoes in the last few hours (or microwave a little if you don’t have the time). I’ll have to try the pork – your sandwich looks so moist too!!! I know what you mean about the smell too-so inviting after being out all day:)
Awesome recipe! I make this with a lean London Broil steak- but the way you make the sauce sounds great; I was just using a bottled BBQ sauce. I’ll try it your way.

Thanks for that, and for anyone that is having difficulty chopping onions without the crying, here’s an incredibly simple tip – put them in the fridge for a few hours, then chop them straight away after taking them out! No more tears! I found some more onion soup recipes here if anyone wants to try some more variations.
