Breakfast Pita Pizza

Wanted: One, part-time gardener. Duties include not letting pre-historic looking weeds below owner’s deck grow to knee height and clover leaf patches run completely amuck. Must be self-motivated and comfortable with two small dogs barking non-stop through adjacent fence. Payment will come in the form of Peanut Butter Pies and Nectarine Vodka Chillers in lieu of cash.

Long story short: 1 insanely rainy June + 1 insanely lazy gardener (me) = the funkiest bunch of weeds I have ever seen growing underneath my back deck – which I had the luxury of pulling this afternoon after work.

I know. I did this to myself. But still!

Oh, before I move on, can we please acknowledge the Petunia’s hilariously growing amongst the Amazonian weeds?? They must have blown in from a neighbor’s garden or something. BAHAHA! :lol:

In other news, I’ll give you one guess as to what I made for dinner tonight…

Clearly I am obsessed with pitas this week, AND pizza for that matter (you too, according to last night’s comments! ;) )

I just couldn’t resist using the rest of ‘em up tonight to make a cheesy, eggs and bacon topped pizza pie!

I started by heating a non-stick sprayed skillet on medium heat, then wilting a big handful of baby spinach in it.

Meanwhile, I whisked together 1 egg + 1 egg white, salt, pepper and hot sauce in a bowl.

When the spinach was cooked down, I added the eggs and scrambled them until they were just barely done.

Next I piled the cooked eggs on top of a whole wheat pita and topped them with cheddar cheese and 1 piece of cooked & crumbled bacon.

Into a 425 degree oven for 8 minutes then topped with a few more dashes of hat sauce. Booyah! The BEST breakfast for dinner!

Breakfast Pita Pizza

Print this recipe!

Serves 1

Ingredients:

1 whole egg

1 egg white

salt & pepper to taste

dash of hot sauce

2 cups baby spinach, chopped

1 whole wheat pita

1/4 cup sharp cheddar cheese, shredded

1 piece cooked & crumbled bacon

Directions:

1. Preheat oven to 425 degrees. Whisk together egg, egg white, salt, pepper and hot sauce in a small bowl. Set aside.

2. Heat a small skillet over medium heat and spray with non-stick spray. Add spinach and cook until wilted, about 1 minute. Add egg mixture and scramble until eggs are just barely cooked through.

3. Line a baking sheet with foil and place the pita on top. Pile the egg and spinach mixture on top of the pita, followed by the cheese and cooked bacon.

4. Bake for 6-8 minutes, or until cheese is melted and bubbly. Cut into four slices and serve.

Cray-cray, people! :D

My vote goes for dinner. It’s usually the biggest, and most flavorful, meal of the day for me. :)

    I don’t know what my favorite meal is, that’s a really hard question! I’m gonna say…..either breakfast, dinner or dessert. Sorry, one is just impossible :)

    Don’t worry, I just realized I somehow killed my two beautiful hanging baskets in a matter of days. Ugh, I suck at it too! Sad thing is that these baskets cost me $80!!!! Live and learn and NEVER spend more money than you can afford on a skill you just don’t have. LoL

    We had pizza tonight, I just didn’t feel like cooking.
    My favorite meal is breakfast, in the summer, because it’s so refreshing and relaxing.
    During the school year, dinner. It’s a nice chance to unwind and relax.
    I despise lunch. Mainly because I hate packing it.

    I will totally help you! I’m total amateur but gardening is kinda my thing!

    I say start in September…hit up all the local greenhouses for their awesome sales on perennials and shrubs and get that thing planted. Come spring it’ll be ready for show.

    take the Help Wanted sign down and i’ll be there tomorrow am! ha! do ya have a fabric weed barrier under that mulch? you will still have to pull a weed or two that roots itself in the mulch, but it sure does help control them. and makes those squatter weeds easier to pull up. do that next time you add a layer of mulch.

      That is what I was going to tell her to do! The fabric barrier really helps. Have Ben help you with that project ;) and you’ll never have to pull weeds again!

    yiiiikes, pulling weeds is no fun. I really need to do that to my garden… it’s kind of getting out of control… but I’ve been lazy and it’s been SO hot that I haven’t done it!

    Weeds! Hate em. We have a gardener that does EVERYTHING for $25 week, but I think the commute would be too loooooong. (CA) Anyway, since you’ve pulled them all, get some Roundup at the hardware store (Home Depot, Lowe’s) and spray where you don’t want anything to grow. This stuff works – on everything – so you have to be careful and not get it on your lawn. I spray it on the little weeds that will grow between the joints in the cement. Call Iowa State Extention for advice too. (If that office still exists!!)

    Not that you asked, but here’s a tip for the weeds. Cover the entire area with mulch. I prefer cedar bark mulch due to the color and because it’s heartier and not like the cheaper mulch; you may have to ask where it’s at but they have it at Home Depot. It’s a little more expensive than the other mulch but it’s a better color and it’s cedar. Layer the mulch 4-5 inches thick. Yes, that is a lot of mulch however if you layer it thick enough, you won’t have to weed again other than for a few spare ones here or there. Dump the mulch over the area and then smooth it out so it’s somewhat level. That’s it.

    Every two weeks or so, you’ll take a garden weasel (it’s a tall thingy with pronged hooks on the bottom) and you’ll turn the mulch. You’ll turn the mulch so it doesn’t mold plus it makes the mulch look fresh like you just put it down. This probably takes 15 minutes tops.

    Once a year, either in the spring or fall, you’ll layer more of the same mulch over it. Mulch breaks down over time and provides some nutrients to the ground. DO NOT PUT PLASTIC OR ANY BARRIER BENEATH THE MULCH. If you layer the mulch thick enough, weeds won’t grow. If it’s not thick enough, weeds will grow.

    You can do the same thing around your bushes and scrubs all over your yard. The key to making it look great is to dig a nice edge around the area at the edge of the mulch and keeping the mulch inside the edge.

    If you’ll follow these steps, you’ll never weed again. Hope this helps:)

    what a great idea! i’ve seen tons of recipes lately for breakfast pizza with a whole egg cracked and baked onto the pizza, but never scrambled. this looks delicious!!
    my favorite meal is hands down breakfast. i always go to sleep thinking about what i’m going to eat in the morning haha. ahh the life of a foodie ;)

    Usually my favorite meal of the day is DINNER. The biggest meal of the day and also the one with the most variety. I pretty much eat the same things over and over for breakfast and lunch. Breakfast is generally a bowl of Total or other healthy cereal. Lunch is generally a sandwich, salad or frozen meal (Lean Cusine) with a piece of fruit and yogurt. Boring, yes, but it works for me.

    I am gettin’ hungry for PIZZA!! Better go pick up some of those Trader Joe pitas.

    Mine is dessert! By that time it means the work day is over, all the dishes are done, the kitchen is clean, and I get to sit and relax with my man and watch some tv. Plus, duh! It’s dessert ;-) Have a great weekend!

    Step one: Buy Roundup and beer. Step two: Drink beer and spray any plant you want dead with Roundup. Step three: Drink more beer.
    If you don’t want weeds to come back, cover the area with river pebbles, you can get them at most sand and gravel yards for about $20/ton, which is a hell of a lot cheaper than buying bags of mulch at a home center, like supermom above suggests. Plus they do not degrade or get washed out by rain.
