Howdy everyone – hope you had a nice weekend!
Things felt decidedly fall-like ’round these parts, what with savoring my first pumpkin-flavored beer of the season on Friday night, breaking out my cozy Mukluks (and flannel pants – Ben’s thrilled… ;) ) after waking up to 44 degrees on Saturday morning, and hanging my fall-themed front door wreath after plucking it out of storage this afternoon!
LOVE this time of year (once I finally accepted it! ;) )
Since Saturday was the official first day of fall, I thought I’d share 50 of my favorite fall recipes from the IGE archives. Another blog I read, sorry Kristen, Whipperberry, posted all kinds of pumpkin and apple recipes earlier in September, FULL of good stuff…like where to start good. Kind of like this one.
Now I am starving. Great.Only an hour till lunch.
Id loved to see what you can come up with for a stufed pumpkin or stuffed acorn squash dish. Im going to be hosting a dinner party around halloween and have been thinking of making one!

I’d love to see more quick crock pot recipes this fall – gotta love that slow cooker!
I just made beer bread using Blue Moon Harvest Pumpkin Ale and it.is.awesome…and so easy!

Since you are taking requests… maybe you can indulge us in an explanation of the variety of squashes available this time of year. I just picked up the Hy-Vee seasons magazine and there was an awesome recipe for 3 different types of squash. One was called a buttercup squash?? I always choke when a recipe calls out that type of ingredient and end up scrapping the idea all together. Maybe you could help? :)

This is great! I’m trying to plan out all my meals for the month of October in hopes to save a little money and time. I’m going to have to try out several of these recipes… Especially the casseroles!
I enjoyed a pumpkin/squash pizza from Gusto at the World Food Festival. Would love to re-create it at home. Instead of tomato sauce, they used pumpkin puree.
I just ran out of stuff for dinner so I will have to go through and pick one of these for my next meal! (Actually, my next 4 meals since I make something and then eat leftovers for the rest of the week!). I think I might make your lasagna soup soon. I have had that pinned for a while and see it every time I go to Pinterest.

Well, it’s kind of hard to make a suggestion after seeing so many recipes! Then again, for someone who doesn’t know how to cook and is just learning, maybe I won’t be able to try most :/ so, an easy one with little ingredients and flavor is appreciated!
I would love to see more crockpot recipes, especially for 2-4 people.

I had that same beer this weekend! Do you like ciders? If so, you should look to see if stores in your area sell Ace Cider. They have a pumpkin one which is amazing.
Thanks for posting all these recipes! I’ve had success with all of yours I’ve tried. One suggestion is for a stroganoff recipe. I’ve tried several and have not yet been able to find something that’s just right. I’m always looking for more suggestions/ideas with that. :-)
I don’t have a request but I made the Starbucks Clone Pumpkin Scones over the weekend and they were so delicious!
I was at Starbucks last week and decided to try one, although hesitant because, even though I like the taste of pumpkin, I don’t love it and didn’t want the taste to be overwhelming. Well, the Starbucks version was good but your recipe was GREAT! Again, I was hesitant because I’ve never made scones and, honestly, the whole kneading and rolling out the dough process scares and intimidates me. But, it was super easy and they turned out just like the pictures! The recipe is definitely a household favorite and will likely become an annual recipe!
I’d love to see recipes for a chicken chili, beef stew, and/or pot roast. Love the blog – your recipes are always a household favorite!
The chili verde above is a chicken chili, and I also found this recipe last night which is one of my FAVES. I tried the Shock Top Pumpkin Wheat for the first time Saturday during the Iowa game. Then a drank a couple more after that horrible botched loss to CMU. Grrrrrr!!!!!!

Ooh, I’m going to be having fun with this page, I can tell. You had me hooked at the Butternut Squash Lasagne. I love pretty much anything butternut squash and/or pumpkin. By the way, how is that beer? I find a lot of so-called pumpkin beers taste a lot like banana (!), so I’m always looking for a recommendation. My go-to is Shipyard Pumpkinhead, but I’m willing to branch out. :-)
It was really good – like drinking liquid pumpkin pie! I only had 1, and wouldn’t have more than 2 in one sitting, but as an occasional treat, it was delish. :)
I would love some vegetarian casseroles! It can be difficult to find hearty recipes for vegetarians.

Hey Kristin…back in January (around the 19th…ish) you posted a recipe for a Chicken Pot Pie soup, but you didn’t tag it. I absolutely loved it and made it 3 or 4 times last winter, and I know the title of the post(something about taking out excess sugar)so I can find it, but if someone missed that post they would never know it was there.

Im actually getting ready to make your butternut squash ravioli for the second time. I made it a few years ago. I loved it!
My friends and I acutally have a freezer meal exchange every other month. I know you dont really do freezer cooking but if you ever decide to give it a whirl, I would LOVE some freezer recipes!
Would love to see a squash recipe that makes squash a main dish vs. a side! Preferably something that isn’t just me coating it in maple and syrup. PLLLLLLEASE?!
You should check out the stuffed acorn squash, or butternut squash ravioli (listed under main dish, and pasta recipes, respectively!)
You didn’t list your spicy cashew stir fry- which I love and make all the time! I had a hard time finding it because I don’t think it’s listed in the recipes, but if I search cashew it comes up (FYI). It is a staple in our house in the fall (and even in the warm summer months when I can muster up enough energy to turn on the stove)!

Oh man….I made the apple crisp(s) last night for our anniversary and my husband and I loved them…even though I forgot to peel the apples! We’ve been eating healthier so it’s nice to have that appley goodness without having a whole apple pie on the counter staring us down. Thanks!

I was surprised not to see a beer cheese soup under the soup section. Also, a bit disappointed. I have never made it but have been looking for a good recipe, because I want to make it soon!!!
