We’re in the middle of sleep training my youngest which means by the time dinner rolls around I have roughly 1/2 a working brain cell — give or take 1/2 a brain cell.

That said, I’m so glad to have the recipe for BBQ, Avocado, Bacon and Cheddar Chicken in my back pocket. This 5 ingredient, 15 minute, 1 skillet recipe is easy enough to make in ones sleep.

Easy Chicken Cutlet Recipe

This recipe takes some of my favorite flavors and textures including sizzling bacon, creamy avocado, gooey cheddar cheese, and smokey BBQ sauce and piles it high atop chicken cutlets.

I love slicing chicken breasts in half to create chicken cutlets because it not only stretches a chicken breast to feed more people, but cutlets cook in half the time as a regular chicken breast.

We eat this low-carb, gluten free, mouthwatering chicken with big side salads and call it dinner. Quick, super satisfying, and did I mention nearly easy enough to make in your sleep?!

How to Make this Recipe

Start by browning bacon that’s been cut in half in a large skillet over medium heat. Remove the bacon to a paper towel lined plate to drain then remove all but 1 Tablespoon grease from the skillet and turn the heat up slightly.

Next, add salt and pepper to chicken cutlets that have been cut from 2 chicken breasts (just cut them in half width wise) and add to the skillet. Saute until golden brown on one side, 2-3 minutes, then flip.

After flipping, spread your favorite BBQ sauce over the top of each cutlet.

Now add the rest of the goodies: 2 cooked bacon halves followed by avocado slices and freshly shredded cheddar cheese.

Place a lid on top of the skillet then continue cooking until the cheese has melted, 2 minutes or so. Since the chicken is cut so thin it will be cooked through in no time.

Plate the chicken then serve with a big side salad, or roasted or Air Fried veggies.

Whatever’s on the side, I hope you LOVE this easy and scrumptious BBQ, Avocado, Bacon and Cheddar Chicken. Enjoy!

Wow. You weren’t kidding. This came together SO fast, was SO easy, and was SOOOO delicious. It’s going in the regular rotation for sure. We ate it with a side salad- a perfect weeknight meal.

This look delish! And I would love a family post on sleep training you did with both boys. I always enjoy real life stories and experiences to add to all the articles and books I’m reading. Have an almost 3 month old and am thinking/worrying about the “putting down awake” concept a loT! Love everything you post- food and family! :)

  4. St. Louis Food says:

Wow! This looks amazing! I can’t wait to try it out!

  5. Sarah C. says:

This could not have come at a better time – we are also doing sleep training with our 4 month old, and any quick and easy dinner is necessary with a) sleep deprivation and b) 2 other kiddos underfoot. This looks dreamy!

    1. Kristin says:

Good luck, Mama!! I hope you love the meal, too!

  6. Jen says:

Perfect chicken dinner for when I don’t want to use the oven and need a quick meal!

    1. Kristin says:

Yes, exactly! Great for the spring/summer as the temperatures begin to heat up!

  7. Kristi says:

Can you give some suggestions on make your own baby food? I want to make some for my grand daughter and would love some suggestions.

  8. Terri says:

That looks really good, but my cook is not big on avocado and cheese, so we’ll see if he’ll try it. He’s great at grilling chicken thighs in BBQ sauce. That’s one of my favorite meals.

  9. Carrie this fit chick says:

BACON + Cheddar is a match made in heaven!! This is a great combo- my boyfriend would LOVE it. He’s a bacon fiend!

    1. Kristin says:

Me too! ;) Hope you guys love it!

  10. Hilary says:

I can’t wait to try this recipe, looks perfect for busy week nights. I have a 3 year old and almost 4 month old so evenings get chaotic. What kind of sleep training are you doing? I have been thinking that’s in our near future as well. Good luck Momma!

    1. Kristin says:

I put him down awake (no pacifier, with an arm out of the swaddle to suck his fingers if he can,) then let him try and put himself to sleep. If he cries I go up at 5 minutes to soothe (kisses, chest rub, etc) for a minute, then leave, let him cry for 7 minutes, go in and soothe, then 10 minutes, etc. So far he hasn’t gone past the second 7 minute cry session so fingers crossed he can keep it up! ??

      1. Hilary says:

Thank you! I love this plan as I need to end the rocking to sleep.

      2. Kristin says:

It’s hard because rocking to sleep works so well (and is soooo sweet and snuggly!!) but, for us, sleep training has really paid off with both boys. I know CIO even modified like we do is not for everyone, but Cam is already sleeping through the night since we started this last week!

  11. Lauren says:

Yum! Chicken breast is our fave, my husband doesn’t like the texture of thighs. This looks great! Do you have any bacon brand suggestions? I try to pick brands without nitrates, but some of them cook up terribly.

    1. Kristin says:

Yes! I am a mega fan of Applegate Low-Sodium Sunday Bacon – it’s the only kind I buy:

  12. Sarah @ Bucket List Tummy says:

15 minutes and one pot meal? Count me in. Plus, melted cheese and avocado. YUM!

  13. Stephanie says:

This looks delicious and hearty! I’d probably have to stick some sort of potato on the side to get the SO to eat it, but herbed potato wedges would probably go great with this!
