Chicken, Bacon and Rice Bowls are a quick and easy, super satisfying dinner recipe that will be on the table in under 30 minutes!

I’ve got a stellar and super easy meal to share with you that’s both savory and decadent tasting, yet full of veggies — Chicken, Bacon and Rice Bowls are what’s for dinner tonight!

Long grain white rice cooked in chicken broth is topped with sizzling bacon plus chicken sauted with baby spinach and garlic.
This easy chicken dinner proves simple really is best!

I love that all the ingredients are fridge and pantry staples, and that the dish is customizable.
Use white or brown rice, or a rice medley. Choose chicken breasts, boneless thighs, or tenders. Add in broccoli, mushrooms, zucchini, or sweet corn.

You’ll love every bite from the first to the last!


Ingredients
- 1-1/3 cups chicken broth
- 3/4 cup long grain white rice, Lundberg White Jasmine Rice recommended
- 4 slices bacon, chopped
- 2 chicken breasts, ~1lb, cut into bite-sized pieces
- salt and pepper
- 2 garlic cloves, pressed or minced
- 4 cups baby spinach, roughly chopped
Directions
- Add chicken broth and rice to a small saucepan then bring to a boil over high heat. Turn the heat down to low, place a lid on top, then cook until the rice is tender, 13-15 minutes. Fluff with a fork then set aside.
- Meanwhile, add bacon to a large, nonstick skillet over medium heat. Brown the bacon then scoop onto a paper towel lined plate to drain and set aside. Remove all but 1 Tablespoon bacon fat from the skillet — add extra virgin olive oil if needed to amount to 1 Tablespoon fat in the skillet.
- Turn the heat up to medium-high then season chicken with salt and pepper. Add to the skillet then saute until cooked through. Add garlic and baby spinach, season with salt and pepper, then toss with tongs and saute until spinach is wilted, 2-3 minutes.
- Divide cooked rice between bowls then top with the chicken and spinach mixture and bacon then serve.

Ugh, men in the kitchen… Do you ever feel like they pick the very moment you need ALL OF THE SPACE to just be there… Waiting for dinner… Or something? The funny thing is, when he does cook, he does a great job but I have to stay far, far away while he does his thing!
Way to go Ben! I’m impressed! I really enjoy cooking with my significant other, although I have to admit to being a bit of a control freak in the kitchen too. And I’m also ridiculously messy! But I’ve always believed that there’s a direct correlation between the size of the mess made and the deliciousness of the meal. ;)
that looks super delish and so easy! my bf cooks usually cooks the same way – just throws together a bunch of his fave stuff (bacon, cheese) or whatever is on hand and it turns out great! he’s also started making more complicated meals from recipes (ie, braised lamb shanks) and gets really excited about it, its so cute!

My boyfriend and I have different cooking styles, so it’s difficult to cook together. He’s very fly by his seat, doing random things that usually turn out well. But I’m very exact, following recipes or things I know work.
We’ve found that if we split up the dinner, say I do the sides and he does the meat, it turns out to be the best meals!
Umm how simple and easy is this! Love it! This is the kind of meal my BF would prepare too. He doesn’t know how to make fancy sauces or pair strange new tastes together…he just goes with what he knows!
So needless to say, I do most of the cooking for us! But he makes good scrambled eggs and sandwiches, and usually doesn’t need me hovering over his shoulder giving directions for those :)
We rarely cook together we have a tiny kitchen so that’s the main reason. My husband is also not a chef and was not raised by anyone that could cook anything outside of the microwave etc so he just doesn’t get it. He will give me a hand when I need one and is always good to stir, open jars, and take things out of the oven though :)

My husband and I do not share the cooking duties. My love for cooking coupled with his intimidation of the kitchen mean that I cook almost every night. I keep trying to teach him how to cook but he rejects the information. Once in awhile if I’m sick or really busy he’ll cook something, which I always appreciate!
I love simple recipes like this! Any kind of rice bowl is a safe thing to make when you’re short on time. Last night I made burrito bowls with just brown rice, black beans, avocado, and salsa and they were so tasty. I also love spending a lot of time in the kitchen making intricate dishes, but I love how satisfying simple dishes are, especially during the week!
Okay, you are one lucky lady with all of these men in your life being great chefs. First your brother and now Ben. Ah, I’m so jealous!
And PS- Did Ben do the plating of this too? Wow, kudos! He may have a career in this food blogging thing. ;)
I would love to have my husband cook, but inevitably he can’t find something or doesn’t know how to do something so I MUST do it myself. It’s better when I come home to something already prepared.

We like to eat what I cook together – I also have control issues in the kitchen. I usually just ask him to keep me company and tell me funny stories while I’m cooking!
