Chicken, Bacon and Rice Bowls are a quick and easy, super satisfying dinner recipe that will be on the table in under 30 minutes!

I’ve got a stellar and super easy meal to share with you that’s both savory and decadent tasting, yet full of veggies — Chicken, Bacon and Rice Bowls are what’s for dinner tonight!

Long grain white rice cooked in chicken broth is topped with sizzling bacon plus chicken sauted with baby spinach and garlic.
This easy chicken dinner proves simple really is best!

I love that all the ingredients are fridge and pantry staples, and that the dish is customizable.
Use white or brown rice, or a rice medley. Choose chicken breasts, boneless thighs, or tenders. Add in broccoli, mushrooms, zucchini, or sweet corn.

You’ll love every bite from the first to the last!


Ingredients
- 1-1/3 cups chicken broth
- 3/4 cup long grain white rice, Lundberg White Jasmine Rice recommended
- 4 slices bacon, chopped
- 2 chicken breasts, ~1lb, cut into bite-sized pieces
- salt and pepper
- 2 garlic cloves, pressed or minced
- 4 cups baby spinach, roughly chopped
Directions
- Add chicken broth and rice to a small saucepan then bring to a boil over high heat. Turn the heat down to low, place a lid on top, then cook until the rice is tender, 13-15 minutes. Fluff with a fork then set aside.
- Meanwhile, add bacon to a large, nonstick skillet over medium heat. Brown the bacon then scoop onto a paper towel lined plate to drain and set aside. Remove all but 1 Tablespoon bacon fat from the skillet — add extra virgin olive oil if needed to amount to 1 Tablespoon fat in the skillet.
- Turn the heat up to medium-high then season chicken with salt and pepper. Add to the skillet then saute until cooked through. Add garlic and baby spinach, season with salt and pepper, then toss with tongs and saute until spinach is wilted, 2-3 minutes.
- Divide cooked rice between bowls then top with the chicken and spinach mixture and bacon then serve.

Ha! My husband and I are the same way. We both love to cook, but we do not love to cook together! Luckily, we take turns in the kitchen so nobody gets hurt.

Wow looks great! My fiance also has a gift for throwing random things together and making them delicious.
We hardly ever cook together during the week though mostly because I work til 7:30 and he gets home at 4 every day (lucky guy!). I usually make something big on Sunday that we can eat for a few days and he’ll cook something midweek. We def have different cooking styles too. I’m more healthy and he’s more…meat, potatoes and extra cheese haha!

LOL. We cannot cook together. I can’t handle my husband in the kitchen. He almost always asks, “want any help?” He KNOWS the answer will be no and that I just appreciate him asking. Win, win ;)
We LOVE to cook together, but typically only have time to do so on weekends. …And there is usually wine involved. We can BOTH be type A about things. I am totally a “close the oven!” kind of chef and he is totally a “put that bowl in the dishwasher!” kind of chef. I hear you. Try it with a glass – okay, maybe TWO glasses – of wine. It really clears up that whole type A cook thing right away ;)

My boyfriend and I rarely cook a whole meal together, mainly because I too have control issues, but he is very sweet and always offers to help. He’s become quite the expert at chopping onions and mincing garlic, two cooking “chores” I am always more than happy to delegate.
I also have to give him credit for making perfect hard boiled eggs. I’ve tried so many times to duplicate his technique, but mine are never quite right.
Haha, I wouldn’t be able to do the kitchen towel around the pot trick, since I have a gas stove! I cook all the food in our house unless its a sandwich :)
I was controlling in the kitchen, until I realized how good he was at chopping vegetables and doing dishes. :)
