Chicken, Bacon and Rice Bowls

I’ve got a stellar and super easy meal to share with you that’s both savory and decadent tasting, yet full of veggies — Chicken, Bacon and Rice Bowls are what’s for dinner tonight!

This easy chicken dinner proves simple really is best!

I love that all the ingredients are fridge and pantry staples, and that the dish is customizable.

Use white or brown rice, or a rice medley. Choose chicken breasts, boneless thighs, or tenders. Add in broccoli, mushrooms, zucchini, or sweet corn.

Chicken, Bacon and Rice Bowls

Chicken, Bacon and Rice Bowls are a quick and easy, super satisfying dinner recipe that will be on the table in under 30 minutes!

Ingredients

  • 1-1/3 cups chicken broth
  • 3/4 cup long grain white rice, Lundberg White Jasmine Rice recommended
  • 4 slices bacon, chopped
  • 2 chicken breasts, ~1lb, cut into bite-sized pieces
  • salt and pepper
  • 2 garlic cloves, pressed or minced
  • 4 cups baby spinach, roughly chopped

Directions 

  • Add chicken broth and rice to a small saucepan then bring to a boil over high heat. Turn the heat down to low, place a lid on top, then cook until the rice is tender, 13-15 minutes. Fluff with a fork then set aside.
  • Meanwhile, add bacon to a large, nonstick skillet over medium heat. Brown the bacon then scoop onto a paper towel lined plate to drain and set aside. Remove all but 1 Tablespoon bacon fat from the skillet — add extra virgin olive oil if needed to amount to 1 Tablespoon fat in the skillet.
  • Turn the heat up to medium-high then season chicken with salt and pepper. Add to the skillet then saute until cooked through. Add garlic and baby spinach, season with salt and pepper, then toss with tongs and saute until spinach is wilted, 2-3 minutes.
  • Divide cooked rice between bowls then top with the chicken and spinach mixture and bacon then serve.

    I made this for dinner tonight and it was so good! I love the simplicity of it- it is something that ill have to make again for a quick and and delicious weeknight meal!

    I wish my boyfriend knew how to cook! He can make eggs, bacon, sandwiches, and grilled cheese- although he had to look up a video on YouTube for instructions on making it hahaha.

    I love to cook and he loves to clean. It’s perfect because no matter how many pans/bowls/utensils I use, he happily washes them all and even polishes the faucet after dinner!

    Ha-I blogged about the one time I gave up complete control of the kitchen to my husband. I like to cook, so I do it most often, and he just stays out of my way. :) That, and he doesn’t know where anything is, he does things differently than I would, so it makes me a little crazy.

    My bf is an awesome cook! His specialty is breakfast/brunch and I handle the rest. I made this tonight and it was so yummy. I didn’t want to waste all that delicious bacon grease [can’t admit this with a straight face], so I used it in my rice in place of the butter I sometimes add and used it instead of olive oil for the chicken. Everything tastes so GOOD with a depth of flavor that isn’t bacon-y but still delicious. So simple. Yay Ben!

    We do, but he’s not very experienced at cooking, so it tends to involve me giving him tasks or showing him how to do things. He’s very cute when he tries to cook for me, though- usually something goes slightly wrong, but not enough to ruin the food. The effort is very sweet.

      I think it might be special to Trader Joe’s. You could jazz up plain rice with a little salt, pepper, thyme, garlic, and onion powder though!
