I can’t wait to try this recipe – my mom doesn’t eat gluten, but loves mac and cheese! So awesome!
Also, I’ve totally done bodyrock, it kicks your butt. I did the 550 (which is totally awesome and I squeeze it in whenever I can) the first time while watching TV. I’d do a exercise, sit and watch tv, do an exercise, sit and watch tv, etc. By the end, I felt half lazy… the next day – I was so sore I couldn’t move!
I’ll have to log on to check out the 30 day challenge!!

D

I LOVE doing my BodyRock workouts. They’re so intense but so short and efficient. I’ve been doing them since last summer, but have been incorporating them 3-4x a week for a couple months now. There are so many to choose from that you won’t have to do the same workout for a VERY long time! Mac and Cheese looks AMAZING and I love that it’s made with quinoa!

Totally making this today, thanks for sharing recipe! Love new quinoa recipes. I definitley want to check out these work outs, always looking for new fitness challenges.

[…] a intense one, what with giving up cookies, candy, and the like during the week, and starting a 30 Day Fitness Challenge. It may seem like I’m taking on too much at once, but I welcome the chance to challenge […]

HA! I can’t believe you used the phrase ‘off the chain’! I love it ;) And I love the sound of the Quinoa Mac and Cheese. Can’t wait to try it! PS. I found BodyRock.tv the other day too, but instead of being awesome like you and trying one of her workouts, I decided that she was too intense for me. Way to challenge yourself!

Holy crap, can’t wait to make this!
Candace 01.19.2012
Your email post lured me in with that pic of the quinoa mac & cheese. I can’t wait to make this! I’ve pinned it to add to our menu coming up.

Hey Kristin,
I just wanted you to know that I started the Bodyrocker workout three days ago but realized I don’t like the prices of the equipment that is needed. Well, my hubby has helped with that. He made a version of the dip bar/equalizer out of PVC pipe and for the fraction of the price. Also, reading some comments on the Bodyrocker website they recommend instead of buying the sand bag, to just use a duffle bag with bags of rice inside. Just thought I would share being were both starting this.
Love your website, being from Iowa myself, I enjoy it.

Hello Amanda, i’m thinking of building my own Equalizer, can you send me the directions on how your husband built yours?
thank you

That workout sounds insane!
I love that you’ve made mac and cheese healthier, and it’s such an inventive twist, I might have to try this :-)

There’s been a bodyrock surge lately! I will have to check it out starting with this fit test! I am bookmarking this recipe, mac & cheese is my weakness and I think this is a great healthy substitute. Thank you!
lauren @ sassy molassy 01.19.2012
Isn’t BodyRock insane? She is so amazing and those abs, oh my! I’ve yet to buy a dip bar though and she seems to use one quite often and a few other random things, but she definitely has the fitness thing down. It’s amazing how sweaty you can get with the right moves in 10 min or less!
Jen@FoodFamilyFitness 01.19.2012
Oh wow. This looks, just wow. SO good!!!!
Katie 01.19.2012
Making this. Done and done. Now, on to bodyrocking. Do you need to have special equipment to do this? Or how does it work? Is it difficult to find everything you need to do it? Please and thank you!
Iowa Girl Eats 01.23.2012
No you don’t need any special equipment. They show modifications in each video if you don’t have what they have!
elizabeths 01.19.2012
I made this today for lunch today and loved it! Had two bowlfuls. My husband and teen son however did not like it. They said its’not Mac n cheese! I told them its a healthier version…ugh boys! I love all your recipes.
Kristina 01.19.2012
Good gracious! I’d like to be in better shape but I’d never want to look like that. Women being that muscle-y is not attractive. We’re supposed to be a little soft and curvy!
Cara 01.19.2012
I’ve been bodyrocking for about two months and I LOVE it!!! I’ve never pushed myself so hard before. And I disagree with the comment above — I think Lisa-Marie has a ROCKIN’ body and I don’t think it’s too much at all.
Casey 01.19.2012
I love the bodyrock.tv website…always gets the heart racing! I dream of one day having her abs!
