Today is St. Patty’s Day, so I put a spin on the classic corned beef & cabbage to make a Rueben Pizza!
Rueben Pizza
Ingredients:
1 personal size whole wheat pizza crust
2 tablespoons Thousand Island dressing
1/2 cup sauerkraut, drained well
1/2 cup corned beef, chopped
1/4 cup shredded cheese
Directions:
1. Layout your pizza crust.
2. Layer on Thousand Island dressing,
sauerkraut,
corned beef,
and cheese.
3. Bake according to package directions.
Presto – Rueben Pizza!
Who wouldn’t love a classic sandwich, such as a Rueben, morphed into pizza form?
Ok, I know there’s a lot of Rueben haters out there. I won’t try and persuade you to make this if you don’t like them, because it tastes exactly like the sandwich – except way more fun and fabulous!

I love you blog! The pics are great and everything looks delicious! What an interesting take on pizza, looks like it would go great with a green beer. But on those nights you don’t feel like cooking try AC LaRocco Pizza, it’s a frozen healthy, nutritious, delicious pizza. You can find it in your grocers natural frozen food section … it’s so yummy my husband and I love it! Check out their website, you’ll be pleasantly surprised! I love sauerkraut. Especially homemade. Once you’ve had homemade sauerkraut you can’t go back to store bought stuff!
I love pretzels and milk. It doesn’t sound too weird but I always get weird looks when dipping pretzels in my milk.
Love sauerkraut. The other foods I love and always eat when available are pickled herring and oysters.

LOVE sauerkraut! Homemade is the best if you can score a jar…other wise Franks Bavarian Style is darn good. Can’t do gizzards…it’s like chewing the inards of a golf ball! Livers are good if cooked properly though. Gino’s has the best in town. I LOVE cottage cheese with a little squirt of mustard mixed in. Very Good!

Sauerkraut was something i only tried a few years ago! I love it on hot dogs.
I’ve never met a vegetable that I didn’t LOVE. One of my favorites is brussel sprouts, which have such a bad reputation, but are SO good! I’m also a huge fan of tofu, which many people have a strong aversion to.
I thought I was going to have to get on the treadmill when I looked out of my office window around 4, saw the sun and couldn’t stop SMILING. :) Got to my most favorite trail and it might be the only time I smiled from ear to ear the entire 3 mile jog! So happy to be outside! I LOVE the sound of birds. I eat a lot of grapefruit, avocados & asparagus. My kids HATE them all.
Mine weird food would probably be Spam. I know, I know. I haven’t eaten it since I was a kid because there’s obviously no reason to eat strange meat out of a can, BUT I can remember exactly what it tastes like and know I would love it to this day! Mmmmm…served with some mustard! Haha..what kind of childhood did I have?!?

I know most of my family think I’m weird for liking oatmeal and veggies so much…and they don’t get the PB thing either; but those are hardly unusual! I just love all food tbh :)
