Roasted Red Pepper Hummus Burgers with Caramelized Onions and Smokey Mayo are crispy on the outside and packed with flavor.

We LOVE burgers at my house, and I’m always dipping or dunking anything I can find into a tub of hummus.
What if, I wondered, I combined the two to create a super tender burger that’s full of flavor? Roasted Red Pepper Hummus Burgers with Caramelized Onions and Smokey Mayo was the result!
Everyone knows that hummus is awesome for dipping with fresh veggies, topping mini turkey meatloaves, and jazzing up plain crackers, but did you know it’s also unbelievable when mixed into plain ground beef and then grilled?
These burgers are the incredible!
All you do is combine ground beef with roasted red pepper hummus (or the hummus flavor of your choice), salt, and pepper, then grill until the burgers are cooked through and have a nice crust on the outside.
The sizzling burger patties are topped with sweet caramelized onions and a Smokey Mayo to create a truly unique and delicious burger. Switch up burger night tonight!
Start by making the caramelized onions. These burgers are good on their own but they’re GREAT when topped with sweet caramelized onions.
Slice 1 jumbo sweet onion then add to a large skillet over medium-heat with 1 Tablespoon extra virgin olive oil and a dash of salt. Cook the onions, stirring every so often for 25-30 minutes or until they’re deep golden brown.
Next make the Smokey Mayo which is just 5 Tablespoons mayonnaise mixed with 2 teaspoons fresh lemon juice, 1 teaspoon smoked paprika, and salt.
Stir to combine then stash it in the fridge.
Burger time!
Add 1lb lean ground beef to large bowl then add 1/2 cup hummus plus llots of salt and pepper.
Next either crush 1-1/4 cups Rice Chex in a plastic bag with a rolling pin if you need a homemade gluten-free bread crumb option, or measure out 1/2 cup + 2 Tablespoons gluten free bread crumbs.
Add the crumbs to the meat then mix until just combined and form the mixture into 4 patties.
Grill for 3-4 minutes a side over medium-high heat then let rest for several minutes. Make sure you don’t flip until you have a nice crust on one side or the burgers can crumble. Give them time and you’ll be fine!
Pop the burgers onto grilled gluten free buns then pile high with baby spinach, tomato, the caramelized onions, and Smokey Mayo. Open wide!
While the smokiness from the char of the grill plays wonderfully off the smoked paprika in the mayo, these burgers are a bit softer than your typical beef burgers, on account of the hummus, so they’d be great to cook in a skillet or grill pan indoors. No grill, no problem. Enjoy!
Roasted Red Pepper Hummus Burgers with Caramelized Onions and Smokey Mayo

Ingredients
- 1 Tablespoon extra virgin olive oil
- 1 jumbo sweet onion
- 1 lb lean ground beef
- 1/2 cup hummus, any flavor
- 1-1/4 cups Rice Chex, crushed OR 1/2 cup + 2 Tablespoons gluten free bread crumbs
- salt and pepper
- 4 gluten free buns
- Toppings: baby spinach, tomato slices
For the Smokey Mayo
- 5 Tablespoons mayonnaise
- 2 teaspoons fresh lemon juice
- 1 teaspoon smoked paprika
- salt
Directions
- Heat olive oil in a large skillet over medium heat then add onions and a dash of salt. Cook, stirring every so often until onions reach a caramel brown color, 25-30 minutes. Set aside.
- Combine ingredients for the Smokey Mayo in a bowl then stir to combine and set aside in the fridge.
- Add ground beef, hummus, crushed chex or panko bread crumbs, salt, and pepper in a large bowl then combine with your hands and form mixture into 4 patties. Grill over medium-high heat on one side until a crust forms, 3-4 minutes, then flip and grill for 3-4 minutes on the other side. Do not undercook or burgers can be crumbly. Place burgers onto buns then add caramelized onions, Smokey Mayo, and additional toppings.
Notes
- Feel free to cook the burgers in a large skillet on the stove instead of on the grill.

Would the red peppers in the humus be hot?. even semi hot. Or like yellow peppers.
Nope! They are 100% mild – no heat whatsoever. :)
Why would you add crunch to a burger. Cause the outside gets a bit anyway on the grill… or fried? Or is it grit like you need inside the burger. ? I am glad to know about the rice chex for gluten free.. Case i need it. I shall browse more recipes for my gluten free daughter. No corn syrup, no corn in anything. I had the best hummus sandwich working at a college and i cant remember what was all in it….
I have made these Burgers twice, and agree the flavor is amazing however I’m having trouble keeping them together whether I grill them or fry them in a pan. What am I missing?

I love this burger! Made it the other night for supper and it was a hit for both my husband and me. Our children, not so much, but they just aren’t into trying new things with an open mind. There’s one leftover burger and I am going to wait until my husband goes running tonight to whip up some caramelized onions to eat with it (I don’t want him to think he gets the last one!)
