These are different than my usual sweet potato fries, as I made them with ZERO oil!
All I did was lightly spray a foil-lined sheet pan with non-stick spray, then laid a sweet potato cut into fries on top.
I seasoned them with garlic salt and pepper then tossed to coat.
I baked them for 10 minutes at 425 degrees, then brought the oven rack up to the top and broiled for ~2 minutes on one side, then flipped and broiled for 2 minutes on the other. Just until they were dark brown and crispy.

Sweet Potato Fries
Description
Sweet Potato Fries are so delicious, and are made healthier by being baked, instead of fried!
Ingredients
- 1 large sweet potato
- salt
- pepper
- non-stick spray
Directions
- Preheat oven to 425 degrees then cut sweet potato into fries, about 1/4" wide.
- Place fries on a foil-lined baking sheet then generously spray with non-stick spray, and season with salt and pepper. Toss to coat fries in seasonings and spray.
- Bake for 10-12 minutes (maybe more depending on how thick you cut your fries) with the rack in the middle of the oven. Move rack to the top then turn on the broiler. Broil for 2 minutes then flip fries and broil for 2 minutes on the other side.

Umm, I could NOT tell the difference between these fries and the ones I usually toss with a teaspoon or two of oil before baking. Awesome!
Three cheers for no added oil!

I love Sundays! Right up until about 4pm..then the anxiety kicks in! I usually go to the farmers markets in the morning and then do something fun in the afternoon. Sounds like you had a great day.. I can’t wait to see that movie!!

Your sunday sounds like my sunday….my boyfriend and I went out exploring our new city, Nashville, and found an AWESOME Mexican restaurant called Chuys where we indulged in enchiladas and margaritas. Afterwards we discovered a movie theater right across the parking lot and saw Transformers…which I must say was very intense for a sunday afternoon. I think I would have preferred a comedy but my dude wanted action.
To answer your question I prefer lazy sundays at home with Alex and our dog and watch movies all day. Maybe get in a good workout in the AM.

Love doing a mix of things on Sundays. Grocery shop, pack lunches for the week, and rent a few DVD’s, after a long morning walk, breakfast out, and a bloody mary! Oh, and last nights dinner was your Buffalo Chicken Egg Roll recipe-YUM!! Thanks!!

I always do my SPF with cooking spray. Easy peasy! You have to try putting them on a cooling rack on top of your cookie sheet while they bake. The air can circulate around them so they get evenly crispy. Perfection!
I am usually a homebody on Sundays, too, but mostly Sunday nights. Eek! The world will implode if I go out on a Sunday night!
Emily@RunningPerspective 07.11.2011
same feelings about sunday for me! its like oh mannnnn time to get my act together and get everything done that i have put offf!!!!

I just made these fries – except I soaked them in BEER before baking. Seriously AMAZING. I usually find Sundays really stressful, but in the summer it’s so much easier to blow chores and errands off for fun in the sun!

We saw Horrible Bosses this weekend too and just LOVED it. So fun! <3
The Cleaner Cook 07.11.2011
I love when a day comes together like that! I’m excited to see Horrible Bosses, too. Especially now after a good review! And the oil-less sweet potato fries look to DIE for!
Kristen 07.11.2011
I am a combination of the 2. Some Sunday’s I want to just not be out all day and some I do not. My main goal is to be home by 7p or 8p on a Sunday night so I can relax before I hit the ground running on Monday!
The sweet potato fries looks so good! I might have to try some this week!

Hey, I just starting following you a couple of weeks ago. I could not believe it when I read about your bird attack. My girls and I were at the park on Friday, and we were attacked by a crazed bird as well! My husband was all sympathetic while laughing uncontrollably on the inside, so at lunch we took him to the park, and the bird attacked him (while we laughed from the car)!
Iowa Girl Eats 07.11.2011
Jokes on him!!! ;)

Isn’t Horrible Bosses hysterical? My BF and I saw it a few weeks ago at a sneak preview. We were dying laughing!
It’s also so funny how removing oil can hardly affect the taste and outcome of a dish. It was clearly worth the risk! Yummy!
Happy Monday— Oh and I’m SO with you on the high anxiety Sundays. Right around 8PM I usually get into a little funk because I realize I have to be at work in 12 hours. Sadness.
jen 07.11.2011
I’ve just caught up on your blog. The bat, the bird, the bird again! OMG! You’ve been through a lot since I last week!
I am just like you. I usually like Sunday to be low key and at home. I need the mental preparedness for Monday. But your Sunday sure looked fun! I probably should get out more. ;)
Ali 07.11.2011
I’m like you, I like to kick it all day Sunday and try to get myself prepped for the upcoming week. With that said, I am getting my Masters in Acupuncture and we have school all day most Sundays, so that idea rarely happens actually. Cheers for husbands that help with the chores on Sundays!
Sara 07.11.2011
Sounds like a fun Sunday! I love getting out of the house and doing stuff on Sunday cause otherwise I’d sit at home and think about how I have to work the next day. I wanted to watch that SEAL show, but I missed it. That book sounds awesome though!
Iowa Girl Eats 07.11.2011
They have a “surviving the cut” series starting tonight all about SEAL training – sooo jazzed to watch!

I try to avoid thinking about work on Sundays. My boyfriend will be like, ugh work tomorrow, and I’m like shhhh, don’t talk about it! Haha. I like to have a mix of relaxation, productivity, and some fun. Yesterday we went to church, ran some errands, watched baseball, worked out, and then ended the weekend with a little cruise to Rita’s for some dessert. It was a great Sunday.
Presley (Run Pretty) 07.11.2011
So glad you mentioned that movie. I’ve been debating whether or not I want to spend money to see it… I’m def going now!
Hope 07.11.2011
Looks like a fun Sunday! :) Those sweet potato fries look tasty! I never use oil when making fries like that. I just stick to cooking spray and it works perfectly. :)
Megan 07.11.2011
It’s funny that you should notice our East Coast accents. The way other parts of the country say it “Hooorible” sounds so funny to me.
Ha! Glad you had a good day.
Iowa Girl Eats 07.11.2011
Haha I’m sure the totally do! :)
Jen 07.12.2011
LOL I agree with Megan!!!!
Kristine @ Running on Hungry 07.10.2011
My boyfriend and I are watching the Discovery Special on Seal Team 6 too! I am glued to the TV screen I find this so interesting!
I can’t wait to see that movie! It looks so funny! I’ve never made sweet potato fries without even a tiny bit of EVOO but I think I’m going to try it!
