Tonight I took the egg casserole concept and made Un-Egg Casserole for dinner! You see, I had the intention of making a Broccoli Cheese Frittata with Toast for dinner, but at the last minute I thought, what the heck, let’s throw it all in!
Un-Egg Casserole
Serves 2
Ingredients:
2 whole eggs
4 egg whites
dash of water
salt & pepper (to taste)
hot sauce (to taste)
1/5 cup grated Parmesan cheese
1-1/2 cups chopped broccoli
2 handfuls baby spinach
1 chopped green onion
2 pieces toasted bread
2 slices sharp cheddar cheese
Directions:
1. Pre-heat broiler. Whisk eggs, water, salt, pepper, hot sauce and Parmesan cheese together.
2. Meanwhile, steam broccoli, spinach and green onion for 3 minutes, or until tender. Allow to cool slightly, and add to egg mixture. Combine.
3. Chop toast and cheese into cubes and add to egg mixture. Combine.
4. Heat a large, oven-safe skillet over medium heat and spray generously with non-stick spray. Add the egg mixture to the skillet and let it set for 2-3 minutes, running your spatula around the edges of the pan every so often to make sure nothing is sticking.
5. After the sides and bottom have set, add the other slice of chopped cheese on top and place your skillet under the broiler.
6. Broil until the top is cooked and golden brown, about 6-7 minutes.
7. Allow the un-casserole to cool for several minutes, slice and enjoy!
YEAH!!!
Who needs a casserole that takes 40 minutes to bake and is loaded with butter and/or cream of who knows what, when you can make this easy, affordable un-egg casserole in 10 minutes?!

I used to love reading Noddy by Enid Blyton. They are childrens books, but I remember so looking forward to bed time when I would get to read these book with my mom and dad!!

I also LOVED reading the Famous Five by Enid Blyton!! She is an amazing British child author and I am very blessed that my parents provided these books to me when I was growing up!! :)

The Laura Ingles Wilder series had my sister and I captivated for years. Our dad would read them to us as bedtime stories. Also a fan of Boxcar Children, Babysitters Club, Nancy Drew, and the His Dark Materials trilogy (The Golden Compass, The Subtle Knife, and The Amber Spyglass). But if I had to nail down one favorite, it’d be The Secret Garden – I’m hoping my lack of interest in gardening right now doesn’t prevent me from having a ‘secret’ garden of my own someday. :)

I guess this would be pretty close to a strata since it uses all the same ingredients? We love to make easy/economical yet delicious egg stratas in our house — yum!

Wow! That casserole! It’s like a savory bread pudding! I have to try it! I was such a bookworm growing up…my favorite single book was probably “The Neverending Story” although I’ve hated all the movies they made about it. I also loved the Narnia books!

My ultimate favorite growing-up series: Anne of Green Gables! I LOVED that series, and reread the first book many times. I also loved the Babysitter’s Club…varied interests are healthy!

I loved those Sweet Valley books too (yes even the ones where they talked about their ancestors-I actually think I preferred those since I’m a history geek).

oh sweet valley high-i read all of those books and for awhile there was a TV show that came on some random channel that i was also thrilled with.

Heck yes, your un-egg casserole looks absolutely to die for! I’ll have to make it sometime.
I miss the beginning days of Lost, too. You know, when I could actually follow was what happening without having to consult the internet and/or Mike every 30 seconds… yeah, that was nice! I still love the show though, regardless of how complex and confusing it has become!

I am a lot older and Island of the Blue Dolphins was a fav. My daughter just read it a couple years ago and Hatchet this year.

OMG. Bread INSIDE of the casserole? Who would have thunk it? My favorites were the pick-your-own endings and the book version of Star Wars. Go ahead and call me a nerd but I loved ’em!!
