Tonight I took the egg casserole concept and made Un-Egg Casserole for dinner! You see, I had the intention of making a Broccoli Cheese Frittata with Toast for dinner, but at the last minute I thought, what the heck, let’s throw it all in!
Un-Egg Casserole
Serves 2
Ingredients:
2 whole eggs
4 egg whites
dash of water
salt & pepper (to taste)
hot sauce (to taste)
1/5 cup grated Parmesan cheese
1-1/2 cups chopped broccoli
2 handfuls baby spinach
1 chopped green onion
2 pieces toasted bread
2 slices sharp cheddar cheese
Directions:
1. Pre-heat broiler. Whisk eggs, water, salt, pepper, hot sauce and Parmesan cheese together.
2. Meanwhile, steam broccoli, spinach and green onion for 3 minutes, or until tender. Allow to cool slightly, and add to egg mixture. Combine.
3. Chop toast and cheese into cubes and add to egg mixture. Combine.
4. Heat a large, oven-safe skillet over medium heat and spray generously with non-stick spray. Add the egg mixture to the skillet and let it set for 2-3 minutes, running your spatula around the edges of the pan every so often to make sure nothing is sticking.
5. After the sides and bottom have set, add the other slice of chopped cheese on top and place your skillet under the broiler.
6. Broil until the top is cooked and golden brown, about 6-7 minutes.
7. Allow the un-casserole to cool for several minutes, slice and enjoy!
YEAH!!!
Who needs a casserole that takes 40 minutes to bake and is loaded with butter and/or cream of who knows what, when you can make this easy, affordable un-egg casserole in 10 minutes?!

Looks WONDERFUL! Too bad I am currently without a broiler option on my oven…stupid oven. I might try someone else’s idea of baking it….

I made this just now for breakfast for a couple of days and took a small sliver to try i made it with 3 whole eggs and 3 whites less cheese and more veggies and cooked it in the over in a pie dish for 25 minutes and OMG i had to put it away before i ate it all i <3 this and there is so many possibilities for combination's!!! thanks for this awesome recipe i immediately added it to my box!

Growing up, I used to read RL Stine’s Fear street series & Goosebumps, and Beverly Cleary’s books (Beezus & Ramona, Harry Huggins, etc).
When I got a little older, I was hooked on VC Andrew’s Dollanganger series/books.

I read pretty much all Sweet Valley, all the time. I’m a twin, so that made it extra special. :) I was completely obsessed and I too have read the ancestor ones many times!!

I was into Laura Ingalls Wilder books & anything with horses in it! Then I moved on to the VC Andews books. I did ALOT of reading when I was young & had all the time in the world.

I loved the choose your owne adventure books…..if you want to do this turn to page 37. I wish someone wrote adult versions of those…….. Who didn’t love Judy Bloom, SE Hinton (The Outsiders)

3) I read Sweet Valley University, Sweet Valley Kids, Sweet Valley Twins, Sweet Valley High, etc. I was definitely obsessed! There was a cheerleader series in the Sweet Valley High books that was AWESOME.

I can’t believe LOST is ending :( it is so brilliant and crazy! And omg Hatchet was one of my favorites too! I read it a million times, and if I remember correctly there was a sequel or two, where he like goes back to visit or something? good memories!

Perhaps you’ve mentioned it before, but how do you track how far you run when you run outside? You know exact distances, but I just run on the sidewalk/road and go by minutes. I’m just getting back into running and was curious. Trail markers?
