Well I’ve spent the past two days working on a grilled Italian chicken and potato packet recipe for you that is refusing to be both edible and delicious. C’est la vie!  All that time at the grill though made me realize that spring has most definitely given way to summer. If the quality face time with the grill didn’t prove it, my overflowing fridge and counter tops certainly do.

Currently they’re displaying an abundance of fresh summer fruits and veggies like kale, cantaloupe, strawberries, peaches, watermelon, zucchini, tomatoes and blueberries. Oh and more basil than I know what to do with. It’s a good problem to have.

I just can’t help myself – it’s like my brain is making up for such a long winter by making my arms grab every fresh fruit and vegetable in sight at the Farmer’s Market and grocery store. Like I said, it’s a good problem to have!

Instead of sharing that bland chicken and potato packet recipe with you I’ve decided to celebrate the arrival of summer by rounding up over 15 of my favorite healthy and, as always, easy recipes featuring fresh, in-season produce.
