Welp it’s official – I require adult supervision around creamy dips. After the Costco Spinach and Artichoke Dip Fiasco of 2020 (I can’t/won’t tell you how long that giant tub lasted at my house,) and Pickle Wrap Dip Gate of, well, a week after that, it’s clear that I cannot be trusted around a big bowl of delicious creamy dip. One dunk turns into five then suddenly snack time has reached scandal status.
#cantstopwontstopMUSTSTOP!!
Anyway, the Super Bowl is this weekend and I am requiring that you clear a bowl-sized-hole in your spread for a batch of Pickle Wrap Dip aka the intense deliciousness of corned beef spread with cream cheese, rolled with a pickle then sliced…in dip form. You know what we call that? An UPGRADE! This chip-busting dip brings new meaning to the word zesty and is perfect for your football watching spread!
Pickle Wrap Dip falls into the category of throw stuff in a bowl then stir it and clearly I am here for it. Cream cheese, sour cream, corned beef (see below for my favorite, certified gluten free brand,) minced pickles, and dried minced onion combine to create one of the best dip recipes EVER. Whip up 5 minutes before kick off or up to two days ahead of time. It’s fabulous right out of the gate, but like most dips, gets even better as it sits.
Speaking of chip-busting, I like serving this hearty dip with sturdy tortilla chips, though pepper slices, cucumber slices, or crackers all work too. Or, you can do what Cameron did and eat a dollop with a pickle. What can I say, when the kid commits, he commits.
How to Make Pickle Wrap Dip
Start by mixing 8oz softened cream cheese – I use 1/3 less fat – 8oz sour cream, and 1 Tablespoon dried minced onion in a large bowl until smooth.
Next add 6oz chopped corned beef – I use Buddig brand which is certified gluten free – and 1 cup minced pickles then fold to combine.
That’s all she wrote! Serve with tortilla chips or crudite then get to WORK! I hope you love this incredibly yummy, super easy dip recipe – enjoy!

This is my favorite holiday appetizer! I could eat the entire bowl by myself!
Totally relate – SO GOOD! Thank you so much for your feedback and recipe rating!
A classic Midwest favorite! I’ve loved this dip forever.
SO GOOD!
Totally yummy! A favorite of the whole fam!
So glad you love it, Cristen!! <3
Yum, the most Iowan and most delicious!
Oh yeah!!
sounds good and easy to me
We had some left over, and used it as an amazing burger topping. It was a fun twist on a normal burger:)
Love pickle wrap dip! Substituted the corned beef with ham!
Love the swap – thanks so much, Brandi!
I love everything pickle! This has all the flavor of pickle roll ups and was great for the Super Bowl!
Thrilled to hear it, Tasia! I’m an all things pickle lover too!
This dip was a hit at the Super Bowl party!
Thank you SO much for your star rating and recipe review, Kayce! I’m so glad the dip was a hit!!
I’ve been making this dip for several years and love it. For our SuperBowl party I made tortilla roll-ups out of the dip (minus a lot of the sour cream so it’s thicker). Yum.
That is a fabulous idea!!
Oh crap. I’m trying to eat healthier and now am convincing myself this might make a good low carb lunch and dinner. But why not breakfast! That’s how dips work in this house. Never knew you could buy corned beef either – you’re always a game changer! Thanks as always.
Breakfast, lunch, snack, dinner – there is NO wrong time to eat this dip. I cannot stop thinking about it!!!
I also have zero control over sour cream based dips! I excuse myself though because my favorite is my mom’s dill veggie dip and it gets me eating lots of veggies. Just don’t ask how much dip I put on each veggie! ;)
Ohhh that sounds so good! Cream cheese, fresh dill, and shredded veggies?
Sour cream mayo garlic salt and dill. I can give you exact measurements if you’d like. :)
Yeah! I’d love that!!
Help! In what part of the grocery store does one find corned beef and/or dried beef?
Right by the other pre-packed deli meats! :)
Thank you!
I think I will try this recipe using dried beef instead of the corned beef….
Go for it!
That is what we do when we make it and it tastes great. Like one of the above posters, we can only make pickle wrap dip when we are going and taking it somewhere otherwise we eat way too much of it ourselves.
Try it with Fritos. Then it will be extra hard to have self control!
Ok now you’ve done it!
THIS IS MY FAVE!! I only make it when I have somewhere to take it because I will eat it all. Even better than pickle wraps because you get a cracker too! :)
Yes – I feel that!!!
Any thoughts on substituting plain greek yogurt for sour cream to make it a tiny bit healthier? Have you tried it?
I haven’t! I am a sucker for sour cream based dips!
Memories of platters of “fish eyes” from our Iowa years! Thanks bunches from my whole family.
Ah! I’ve never heard them called that but I can totally see it!
My wife made a version of this dip (minus the onion) for her first family Christmas gathering 41 years ago. My sisters decided she could join the family based on it!
LOVE that story!!
Any recommendations on which brand of pickles to use?
I use Vlasic!
