If you’re not from the Midwest, this regional appetizer is thin slices of corned beef spread with cream cheese then rolled up with a dill pickle and sliced.
It sounds…nuts? But file this popular dish under “don’t knock it until you try it”. It didn’t reach legendary Midwestern snack for no reason!
Anyway, rolling and slicing those suckers up can be tedious and time-consuming. Problem solved with my chip-busting Pickle Wrap Dip.

Easy Cream Cheese Dip
Pickle Wrap Dip falls into the category of throw stuff in a bowl then stir it and clearly I am here for it.
Cream cheese, sour cream, corned beef, minced pickles, and dried minced onion combine to create one of the best dip recipes EVER. Whip up 5 minutes before kick off or up to two days ahead of time. It’s fabulous right out of the gate, but like most dips, gets even better as it sits.
I like serving this hearty dip with sturdy tortilla chips, though pepper slices, cucumber slices, or crackers all work too.

How to Make Pickle Wrap Dip
Start by mixing 8oz softened cream cheese – 1/3 less fat or full fat – 8oz sour cream, and 1 Tablespoon dried minced onion in a large bowl until smooth.

Next add 6oz chopped corned beef – I use Buddig brand which is certified gluten free – and 1 cup minced pickles then fold to combine.

That’s all she wrote! Serve with tortilla chips or crudite then devour.

Ingredients
- 8 oz cream cheese, full fat or 1/3 less fat, softened to room temperature
- 8 oz sour cream
- 1 Tablespoon dried minced onion
- 1 cup minced dill pickles
- 6 oz gluten free corned beef, chopped, Buddig recommended

Directions
- Add cream cheese, sour cream, and dried minced onion to a large bowl then stir until smooth.
- Fold in pickles and corned beef then refrigerate for at least an hour and up to overnight. Serve with chips, crudite, etc.

I’ve been making this dip for several years and love it. For our SuperBowl party I made tortilla roll-ups out of the dip (minus a lot of the sour cream so it’s thicker). Yum.

I also have zero control over sour cream based dips! I excuse myself though because my favorite is my mom’s dill veggie dip and it gets me eating lots of veggies. Just don’t ask how much dip I put on each veggie! ;)

That is what we do when we make it and it tastes great. Like one of the above posters, we can only make pickle wrap dip when we are going and taking it somewhere otherwise we eat way too much of it ourselves.
Try it with Fritos. Then it will be extra hard to have self control!
